Are you a morning person? I am NOT. Do you like eating breakfast, or even eating breakfast? Maybe these pancake muffins will change your mind.

We all know it is an important meal of the day, yet so many of us seem to skip it. Homemade granola bars are great for helping you not skip your first meal of the day. Somedays I just will eat a banana for breakfast as I run out the door.

RECIPE and INSTRUCTIONS for this banana breakfast can be found at the bottom of this post.

Ingredients ready to create a healthy breakfast with bananas.

Unfortunately, most of us cannot run on the weekend brunch schedule. We have jobs, kids, businesses to run, or just daily routines that force us to wake up and get at it.

What’s In A Healthy Banana Split?

Healthy breakfasts are not that difficult, and this banana split recipe can be made for breakfast in a matter of minutes. I have even made this ahead of time as well. Works great!

    • cottage cheese
    • Greek yogurt
    • jam
    • peanuts
    • fresh berries

My blog has lots of great make-ahead breakfast ideas. Breakfast casserole, breakfast bowls, and even breakfast donuts are just a few of the healthy ideas to start your day on the right track. Smoothies are great for breakfast or lunch.

If you love toast for breakfast, then Smashed Avocado on Toast is right up your alley. Great for lunch too.

Talking about making breakfast in advance, this Easy Muesli rocks. Make your own Alpen cereal blend at home just the way YOU like it.

Not a breakfast person? This blueberry banana overnight oatmeal recipe is just what you need. Breakfast is waiting, all you have to do is dig in.

How To Make A Breakfast Banana Split

Classic banana splits are made of bananas, ice cream, and toppings. A banana split for breakfast is the same, just using healthy ingredients.

Banana breakfast that is like eating dessert.

We all know that bananas for breakfast on their own are delicious and healthy. Combine them with other ingredients like cottage cheese, yogurt, and nuts, to make a “dessert type” meal that is perfect for breakfast or lunch.

Preparing this banana split is so easy, even the kids can do it!

    • Peel and slice the banana.
    • Layer on the ingredients.
    • Eat!

    Recipe Tips/Substitutions

Let your imagination get you salivating and play with these ingredients. Mix and match to your heart’s content.

    • Cottage cheese can be full fat or fat-free. Don’t like cottage cheese? Add more yogurt.
    • Greek yogurt is so thick and rich. Skyr yogurt works great too. You can even use any flavour you like.
    • Jam can be any flavour you like. Blueberry and cherry are other great options. If you need to watch your sugar, sugar free jam is perfect for this recipe.
    • Peanuts can be replaced with any variety. If you cannot eat nuts, try chia seeds or hemp hearts. You can even use granola as a topper.
    • Fresh berries as garnish are optional but totally delicoius. Any berry works here.
A spoonful of breakfast banana split ready to eat.

Let the kids have some fun designing their own breakfast banana split. I guarantee getting them to eat a healthy breakfast will not be a chore anymore, and will be EXCITED about it.

What a great way to begin the day. I am terrible at breakfast and most often skip it. I am realizing the importance of it and slowly trying to get out of my bad habit. This is definitely something I would love in the mornings and it is so quick to put together.

I am really excited about this. I can sympathize, I’m not a morning person either but on those super early mornings when I have to eat or wait until lunch, I have to come up with something. What really struck me on this recipe is how healthy AND fast it comes together. I saved this. Going to incorporate this into my crazy early mornings, I’m talking about my 5am ones, yikes!

I am a morning person but I am NOT a breakfast person. While I love breakfast food, I often skip the meal. We often serve breakfast for dinner, which the entire family loves, and I know they would gobble up these banana splits. My kids can’t have a banana split without chocolate chips so I would add mini chips to the top of this. I’d eat this for an afternoon snack too!
