Best part, you can design your own version of this healthy breakfast. This breakfast banana split is hands-down my grandson’s favourite breakfast!! He also loves banana popsicles!!
Are you a morning person? I am NOT. Do you like eating breakfast, or even eat breakfast? We all know it is an important meal of the day, yet so many of us seem to skip it. Homemade granola bars are great for helping you not skip your first meal of the day. Somedays I just will eat a banana for breakfast as I run out the door.
I guess the fact I am not a morning person makes sense that breakfast is not my favourite meal of the day. If I don’t want to be awake, why would I want to eat? Now by the time brunch rolls around, we are talking my language.
Unfortunately, most of us cannot run on the weekend brunch schedule. We have jobs, kids, businesses to run, or just daily “routines” that force us to wake up and get at it. That is where this healthy breakfast recipe comes in handy for those busy weekday mornings.
Healthy Breakfast Recipes
I am all about having breakfast ready and waiting for me to eat when I get up. If you are one of those busy morning families, you will appreciate anything that helps make your morning easier. A simple healthy breakfast is the most important meal of the day.
My blog has lots of great make-ahead breakfast ideas. Breakfast casserole, breakfast bowls, and even breakfast donuts are just a few of the healthy ideas to start your day on the right track. Smoothies and overnight oats are great options too.
Healthy breakfasts are not that difficult, and this banana split recipe can be made for breakfast in a matter of minutes. I have even made this ahead of time as well. Works great!
How To Make a Healthy Banana Split Breakfast
Classic banana splits (the treat kind) are made of bananas, ice cream, and toppings. A healthy banana split is the same, just using healthy ingredients.
We all know that bananas for breakfast on their own are delicious and healthy. Combine them with other ingredients like cottage cheese, yogurt, and nuts, to make a “dessert type” meal that is perfect for breakfast or lunch.
You don’t even need a recipe to make this Healthy Banana Split Breakfast, but I have included one to give you an idea of what you can use to create your own tasty version.
The basic recipe includes:
- bananas
- cottage cheese (I use 1%)
- yogurt (I use Greek. unflavoured)
- jam (honey or maple syrup would work too)
- nuts (you can also use hemp hearts or chia seeds)
- fresh fruit
Let your imagination get you salivating and play with these ingredients. Mix and match to your heart’s content. Use all yogurt, or all cottage cheese (I like a combination of both). Try a different jam. You can even warm the jam if you like before topping your healthy breakfast creation.
Flavoured yogurts work great too. Greek, plain, Skyr, whichever you like (or happen to have on hand). Berries and nuts of all kinds make great toppings. You CANNOT mess this recipe up! This is my dear hubby’s “go to” breakfast a few mornings a week. Keeps him full and happy till lunch.
Ask your kids if they would like a banana split for breakfast, and see what happens. Let the kids have some fun designing their own breakfast banana split. I guarantee getting them to eat a healthy breakfast will not be a chore anymore, and will be EXCITED about it. Shake up your morning routine with this Healthy Banana Split Breakfast Recipe. Healthy Banana Split Breakfast Recipe
Ingredients
- 1 banana
- 1/4 cup cottage cheese (I used 1%)
- 1/4 cup Greek yogurt
- 2 tbsp strawberry jam (less sugar the better)
- 1 tbsp dry roasted peanuts (I used unsalted/unseasoned)
- fresh berries for garnish (optional)
Instructions
- Peel the banana, cut in 1/2 lengthwise and place in a shallow bowl. Alternately you can cut the banana into chunks and place in a bowl.
- Top banana with the cottage cheese and yogurt.
- Add the jam on top (you can warm the jam up if you wish).
- Add the peanuts.
- Garnish with fresh berries (optional).
- ENJOY!!
