    This oven baked egg sandwich recipe is ready in under 30 minutes! Just what you need for a quick meal the whole family will love. Full instructions are in the recipe card.

    • Beat the eggs and water.
    • Add the cheese and seasonings.
    • Pour into baking dish.
    • Bake until done.

    Once the eggs are baked, cut them into squares. If you really want to get creative, you can use a round cookie cutter to cut them into circles.

    • Feta cheese is so delicious, but any cheese will work. Pick your favourite.
    • Mayo can be replaced with flavoured mayo, cream cheese, butter, ketchup, salsa, tzatziki sauce or even hummus.
    • Season with anything you like. Thyme, oregano, or seasoning blends are a few options.
    • Add some precooked bacon, sausage or ham to the mix before baking, or as an additional topping.
    • Microgreens can be replaced with lettuce, arugula, spinach or baby kale.

    Ingredients

    • 2 ounces feta cheese crumbled
    • ½ teaspoon dried dill
    • ¼ teaspoon black pepper
    • 1 tablespoon water
    • 3 tablespoons mayonnaise
    • 2 English muffins
    • Microgreens for garnish

    Instructions

    • Preheat oven to 350ºF and grease an 8×8 baking dish.
    • Beat the eggs and water in a bowl.
    • Add the feta cheese, dill and pepper. Combine well.
    • Pour the mixture into the prepared baking dish.
    • Bake for 20 minutes. Eggs should be set, and the edges will begin to brown.
    • Remove from oven. Let sit for a minute, then cut into 4 squares.
    • Toast the English muffins and spread with mayo.
    • Assemble the sandwich, top with microgreens and enjoy.

    The baked eggs are totally customizable. You can use just about anything you like. Change the cheese, add some cooked bacon or sausage. Use different spices the choices are endless.
    English muffins can be replaced with bread, bagels, or thin sandwich buns.
    Mayo can be substituted with butter or any other spread you like.
    Microgreens of any kind will work, along with any other garnish you like. 
    You can make the baked eggs ahead of time, wrap and place in the fridge or freezer. Warm in the microwave or oven.
