Easy Baked Egg Sandwiches
Ingredients
- 2 ounces feta cheese crumbled
- ½ teaspoon dried dill
- ¼ teaspoon black pepper
- 1 tablespoon water
- 3 tablespoons mayonnaise
- 2 English muffins
- Microgreens for garnish
Instructions
- Preheat oven to 350ºF and grease an 8×8 baking dish.
- Beat the eggs and water in a bowl.
- Add the feta cheese, dill and pepper. Combine well.
- Pour the mixture into the prepared baking dish.
- Bake for 20 minutes. Eggs should be set, and the edges will begin to brown.
- Remove from oven. Let sit for a minute, then cut into 4 squares.
- Toast the English muffins and spread with mayo.
- Assemble the sandwich, top with microgreens and enjoy.
