    Pancake mix muffins are perfect for on the go breakfast. All you need are 3 ingredients to make these soft and fluffy totally customizable breakfast gems.

    Yes you can make muffins with a pancake mix. The same flavours of classic pancakes, but in a cute muffin shape. Quick and easy. Great for taking on the road.

    I have not met a person that does not love pancakes. Oatmeal pancakes are one of our favourites. Super hearty with lots of nutritious ingredients.

    When it comes to breakfast, most people have busy mornings. Easy breakfast food like baked oatmeal makes things much easier. Ready to eat food is a must. Some people even skip eating breakfast, but we all know that is not ideal.

    Eating on the run seems to be pretty common. Baked breakfast donuts, egg muffin omelettes and cranberry bran muffins are great for grab and go meals.

    Easy Pancake Muffin Ingredients

    This is so easy. Pick your favourite pancake mix, and you are ready to go. This fun twist on pancakes is sure to please the whole family.

    • egg

    Pancake Mix Muffins In Minutes

    OMG, these muffin tin pancakes are super easy to make. Be sure to check out the recipe tips below.

    Mixing up some pancake batter.
    • Mix the batter according to package directions.
    • I like to use a large measuring cup.

    • Bake until done.

    • Cool slightly before removing them from the muffin tin.

    Suggestions / Recipe Tips

    Mix according to package directions. I like to use milk, but water or non-dairy milk works.

    I like to add eggs to the mix to make the muffins soft and fluffy. This is optional, especially if your pancake mix does not require eggs in the batter.

    The pancake batter is totally customizable. Add some chocolate chips, dried fruit or nuts, whatever your family likes.

    I like to keep leftover muffins in the fridge. Warm slightly in the microwave before eating makes them super yummy. Dipping them in a bit of maple syrup is delicious.

    Ingredients

    • 2 ⅔ cups pancake mix any kind
    • 2 eggs
    • 1 cup milk or water
    US Customary – Metric

    Instructions

    • Preheat oven to 350ºF, and grease a muffin tin.
    • Mix the batter in a bowl.
    • Pour the batter into the muffin tin.
    • Bake the muffins for about 15 minutes (check for doneness with a cake tester or toothpick).
    • Remove from oven and allow to cool before removing the muffins from the pan.

    Notes

    Mix the pancake batter according to package directions. Any flavour will work.
    The addition of eggs make the muffins fluffier.
    Water or milk can be used in the batter.
    Optional mix-ins like chocolate chips, dried fruit or nuts can be added to the batter.
    These will keep for a few days in a sealed container. I like to keep them in the fridge and warm in the microwave before serving.
    Perfect for freezing. 
    Can be served with a side of maple syrup for dipping.
