Bake the muffins for about 15 minutes (check for doneness with a cake tester or toothpick).
Remove from oven and allow to cool before removing the muffins from the pan.

Mix the pancake batter according to package directions. Any flavour will work.The addition of eggs make the muffins fluffier.Water or milk can be used in the batter.Optional mix-ins like chocolate chips, dried fruit or nuts can be added to the batter.These will keep for a few days in a sealed container. I like to keep them in the fridge and warm in the microwave before serving.Perfect for freezing. Can be served with a side of maple syrup for dipping.
