    This tomato sauce could not be easier to make. Simple fresh ingredients and a few minutes of prep. Think of fresh bruschetta for pasta. You can even make it ahead of time.

    The Italians know a thing or two about pasta. Fresh tomatoes and pasta make the best dinner any night of the week. Puttanesca sauce combines fresh tomatoes and olives into a rich and tasty sauce.     Italian checca sauce, is a cold pasta sauce, perfect for using ripe garden fresh tomatoes. Light, quick and healthy. Great for any night of the week.

    • olive oil
    • garlic
    • black pepper

    No-Cook Fresh Tomato Sauce

    This easy homemade pasta sauce from scratch comes together in minutes. Quick, easy and no cooking required (except boiling some pasta). Full instructions are in the recipe card.

    • Wash and chop the tomatoes.

    • Slightly mash the tomatoes.
    • Combine all the ingredients.

    The easiest pasta sauce in Italy requires only a handful of fresh ingredients. Toss is with some cooked pasta, garnish it with cheese, olives, fresh herbs and enjoy. Don’t like cooking? This recipe is a must try!! Nourishing and super easy.

    Suggestions / Recipe Tips

    • Fresh tomatoes are key to this rustic tomato sauce. Any variety will work. I like to remove excess pulp and seeds so the end result is not too watery.
    • Olive oil is a must. Make sure it is a high quality. You can use a flavoured olive oil if you like. I used pesto flavoured olive oil in this recipe.
    • Garlic is a staple in Italian recipes. If you don’t have any fresh garlic on hand, you can use dehydrated garlic like I did.
    • Fresh basil is essential. I also used fresh thyme. You could also add oregano or Italian parsley. If you have a herb garden be sure to check out how to freeze fresh herbs, and making DIY herb salt.
    • Parmesan cheese thickens the sauce, you can adjust the amount to your liking.
    • Red pepper flakes will add a bit of heat if you like your pasta sauce on the spicy side.

    This cold pasta sauce can be made a day or two ahead of time. Store it in an airtight container and keep it in the fridge. Let it come to room temperature before using. Perfect for any kind of pasta. Use as a topping for chicken and seafood.

    Ingredients

    • 2 pounds fresh tomatoes
    • 1 clove garlic
    • 3 tablespoons olive oil
    • ¼ teaspoon black pepper
    • 2 tablespoons fresh basil
    • 1 tablespoon fresh thyme
    • ¼ cup grated Parmesan cheese

    Instructions

    • Wash and chop the fresh herbs and set them aside.
      2 tablespoons fresh basil, 1 tablespoon fresh thyme
    • Wash and chop the tomatoes into large chunks, removing most of the pulp and seeds. Place the chopped tomatoes in a large bowl.

    • Using a potato masher, gently mash to breakdown and release some of the juice.
    • Add the rest of the ingredients and mix well.
      1 clove garlic, ¼ teaspoon black pepper, ¼ cup grated Parmesan cheese, 3 tablespoons olive oil
    • Let the pasta sauce sit for at least 15 minutes for all the flavours to combine. Serve over your favourite pasta.

    Notes

    This can be made ahead of time and placed, covered in the fridge until ready to use. Bring to room temperature before serving.
    You can use more or less cheese, herbs and black pepper, or add other seasonings of your choice.
    Olive oil can be plain or flavoured. I used pesto flavoured olive oil in this recipe.
    Great for pasta, but also use to top chicken or seafood. In a pinch it can be used as bruschetta too.
