Did you know you can freeze fresh herbs in cubes? What a fantastic way to preserve them for using all winter long. A cool culinary treat.
This has got to be the easiest idea ever. If you happen to have a herb garden, these little frozen herb cubes are a must, super quick and easy to make. It also works for when you have leftover store bought herbs. No more throwing them out, less food waste.

A super convenient way to add flavour to recipes. With some ice cube trays and oil, you will be amazed how easy these cute little herb cubes are to make.
I am not a green thumb, but I do have a herb garden in the summer. Such an easy way to add a flavour boost to recipes. They are great added to cooked dishes, dips, sauces, making flavoured mayonnaise , infused cream cheese, and of course as a garnish.
- Herb salt is a culinary delight, and makes a great food gift idea.
- Parsley sauce is great for roasted veggies, meat seafood and more.
- Mint syrup is perfect for adding to drinks.
When it comes to preserving herbs, this is the best idea ever. I am in the process of freezing my garden fresh herbs for the winter.

Easy Frozen Herbs
Herbs like parsley, mint, basil, thyme, oregano, chives, rosemary and dill are great to work with.

Easily Freeze Fresh Herbs In Cubes
Easy preserving methods are right up my alley. Trust me, it does not get easier than this. All you need are some ice cube trays, oil and herbs.

- All you have to do is wash and dry your selection of herbs.
- Finely chop with a knife or snip with kitchen shears and set aside.

- Fill the ice cube compartments with the herbs. See recipe card instructions.
- Top each compartment with oil.

- Cover the filled tray with foil.
- Place in the freezer for several hours or overnight.
Once the herb cubes are frozen, they can be taken out of the trays and placed in freezer bags.
This is such a great way to have fresh herbs, especially during the winter months. Do they still taste fresh? Yes they do, perhaps not as robust as fresh, but super close.

There are lots of great ways to use them, here are just a few suggestions, I bet you can think of more.
- Omelettes and scrambled eggs.
- Roasted vegetables.
- Rice and pasta.
- Soups, stews and sauces and marinades
- Add to chicken, red meat and seafood.
Suggestions / Recipe Tips
I used olive oil, but any oil will work, or even melted butter. You can also use water in place of oil, especially if you are going to use them for drinks, garnishes and dressings.
Herb cubes can be one type or you can combine different herbs together to make a herb blend. Experiment with different types to see which kind you like best.
You can add some seasoning like garlic, pepper or chili flakes before freezing.

If you are placing all the cubes in one freezer bag, I like to wrap each type in plastic. Alternatively you can make individual bags of each type.
These frozen herb cubes will last for months. They can be used right out of the freezer for hot applications, or thawed for using in cold recipes.

You might like to try your hand at making some really tasty jams, and I know for a fact if you have any foodie friends, they would love a jar or two. Tomato jam and onion jam are our favourites. Freeze Fresh Herbs In Cubes
Ingredients
- 3 ounces fresh herbs (basil, chives, parsley, dill etc.)
- ⅓ cup olive oil
Instructions
- Wash and dry your fresh herbs.
- Finely chop and place in piles.
- Fill each section of the ice cube tray ¾ full with the chopped herbs. Slightly press down.
- Pour some olive oil into each section to cover the herbs, do not fill to the top.
- Cover the tray with foil, and place in the freezer until frozen solid.
- Once frozen, remove the tray and pop out the cubes. They are ready to use.
- To store, place in freezer bags and keep them in the freezer. These will last for months.
