Fill each section of the ice cube tray ¾ full with the chopped herbs. Slightly press down.
Pour some olive oil into each section to cover the herbs, do not fill to the top.
Cover the tray with foil, and place in the freezer until frozen solid.
Once frozen, remove the tray and pop out the cubes. They are ready to use.
To store, place in freezer bags and keep them in the freezer. These will last for months.

Notes
The amount of herbs and oil will vary according to the size of your ice cube trays. You can combine herbs as well, and add additional seasonings like garlic or red pepper flakes. You can replace the olive oil with another type of oil, melted butter, or use water.
