Honestly, I really only thought of parsley as a garnish. Boy was I wrong. In the summer I like to have a little herb garden, and once I realized how versatile and delicious parsley is in recipes, I grow it every year.

There are so many uses for this vibrant green herb. In case you didn’t know, it comes in different types and actually is rich in vitamins and minerals, so it is a healthy addition to your meals and recipes.

Curly parsley in a measuring cup.

Curly leaf parsley is the most common, and the easiest to grow. Good thing since I don’t really have a green thumb, but it seems to flourish in my garden.

The next most popular would be flat leaf parsley, very popular in Italian cooking. I was surprised to find out about the native Japanese parsley, and the edible root called Hamburg parsley, similar to parsnip.

Whether you want to make Chimichurri, Persillade, Gremolata, or creamy British parsley sauce, this wonderful herb will be the star ingredient.

This tasty green sauce comes together in minutes. Full instructions are in the recipe card.

    • Wash the parsley.

    • Add everything into a mini food processor, or use an immersion blender.
    • Blitz until smooth.
    • Pour into a dish, and this wonderful herbaceous sauce is ready to use.
Blended green sauce made with fresh parsley.

I used an immersion blender for making this sauce nice and smooth. A mini food processor is another option. If you don’t have access to either, you can always make this by hand. Just finely chop the parsley and mix with the other ingredients. Your sauce will have more texture but still taste delicious.

How can you use it? Well let me give you some ideas:

    • Use on roasted or steamed vegetables.
    • As a simple pasta sauce.
    • Use it to make a green rice dish.
    • Add to soups and stews.
    • Combine with yogurt, sour cream and cream cheese to make dips and spreads.
    • Use it as a marinade
    • Perfect with meat and seafood.

    Suggestions / Recipe Tips

    • Fresh parsley is a must. I used the familiar curly variety for this recipe, but flat leaf is another option.
    • Garlic can have a very strong taste, and since my hubby does not like raw garlic, I used dehydrated garlic. Feel free to use fresh garlic if you prefer, and adjust the amount according to your taste.
    • Olive oil can be replaced with avocado oil. Use more or less if you are looking for a different consistency in the sauce.
    • Chives can be swapped out for green or red onion.

Store in a jar. This sauce will keep for several days in the fridge. Need a longer storage? No problem, this recipe freezes well. In fact, I do this all the time. Great for adding a flavour punch to recipes in the winter months.

How to freeze parsley sauce in ice cube trays.
    • Simply get some silicone ice cube trays.
    • Fill the compartments with the sauce.
    • Place the trays in the freezer until frozen.
    • Pop out the cubes and put them in a freezer bag. These frozen herb cubes will last for months.
