Wash and chop the tomatoes into large chunks, removing most of the pulp and seeds. Place the chopped tomatoes in a large bowl.
2 pounds fresh tomatoes
Using a potato masher, gently mash to breakdown and release some of the juice.
Add the rest of the ingredients and mix well.
1 clove garlic, ¼ teaspoon black pepper, ¼ cup grated Parmesan cheese, 3 tablespoons olive oil
Let the pasta sauce sit for at least 15 minutes for all the flavours to combine. Serve over your favourite pasta.

This can be made ahead of time and placed, covered in the fridge until ready to use. Bring to room temperature before serving.You can use more or less cheese, herbs and black pepper, or add other seasonings of your choice.Olive oil can be plain or flavoured. I used pesto flavoured olive oil in this recipe.Great for pasta, but also use to top chicken or seafood. In a pinch it can be used as bruschetta too.
