- Wash and dice the peppers.
- Cook them with the garlic and seasonings.
- Add the tomatoes, and cook until blistered.
- I like to mash just a little to break up the large chunks of tomatoes, but this is completely optional.

Fresh tomatoes are key to this sauce. Any variety will work, and large tomatoes can be cut into chunks so they cook more easily.
Bell peppers are optional, and any colour will work. I love adding them for colour and flavour. You can always use onions if you prefer, or even some fresh mushrooms.
Chili flakes add a nice little kick of heat. Use the amount that works for you. Not a fan of spicy pasta sauce? No problem, omit them, the sauce will still be delicious.
Serve with any cooked pasta or even rice. Garnish with grated cheese and fresh herbs. Basil, thyme, or oregano are all delicious.
Leftovers can be stored in a sealed container in the fridge for up to 4 days. Freeze for longer storage.

Blistered Tomato Pasta Sauce
Ingredients
- 1 pound grape tomatoes washed
- 6 ounces bell peppers diced
- 2 cloves garlic minced
- 2 tablespoons olive oil
- ¼ teaspoon red chili flakes optional
- ¾ teaspoon Italian seasoning
- salt and pepper to taste
Instructions
- Wash the tomatoes and set aside. If they are large, you can cut them in half.
- Wash and dice the bell peppers and set aside.
- Mince the garlic, set aside.
- Heat the olive oil over medium high heat in a heavy bottomed pan.
- Add the garlic and cook for 30 seconds.
- Add the peppers and seasonings. Mix and cook for about 3 minutes.
- Add the tomatoes, and cook until the skins have blistered, about 5-6 mnutes. Stir often.
- Remove from heat. I like to use a potato masher just to break the tomatoes up a bit, but this is totally optional.
- Pasta sauce is ready to eat. Top cooked pasta with sauce, and garnish with fresh herbs and parmaesn cheese.
