Blistered Tomato Sauce
is the perfect pasta topping. Made with fresh tomatoes, great for busy weeknights.

Ingredients

pound
grape tomatoes
washed
6
ounces
bell peppers
diced
2
cloves
garlic
minced
2
tablespoons
olive oil
¼
teaspoon
red chili flakes
optional
¾
teaspoon
Italian seasoning
salt and pepper
to taste
Instructions
Wash the tomatoes and set aside. If they are large, you can cut them in half.
Wash and dice the bell peppers and set aside.
Mince the garlic, set aside.
Heat the olive oil over medium high heat in a heavy bottomed pan.
Add the garlic and cook for 30 seconds.
Add the peppers and seasonings. Mix and cook for about 3 minutes.
Add the tomatoes, and cook until the skins have blistered, about 5-6 mnutes. Stir often.
Remove from heat. I like to use a potato masher just to break the tomatoes up a bit, but this is totally optional.
Pasta sauce is ready to eat. Top cooked pasta with sauce, and garnish with fresh herbs and parmaesn cheese.
