Zoodles (zucchini noodles) are so much fun. Perfect in salads, zoodle bowls, and as a pasta/noodle substitute. How do you like to eat them?
I am obsessed with zoodles, but it doesn’t stop there. I am even more obsessed with my spiralizer. What a fun kitchen gadget. Zucchini, potatoes, cucumbers, anything that can get turned into noodles will have their turn. Thick, thin or long shaved strands, new and tasty recipes will be happening in the kitchen.
DO YOU HAVE A SPIRALIZER?
Believe me I didn’t think I needed this handy dandy kitchen gadget. I know there are ways to make noodles with one. I have a mandolin (yup another gadget) that works fairly well. My husband stresses me out when I use it, so I try to make sure he is not around. Too many horror stories seen on MasterChef and Hell’s Kitchen have him hovering over me when I use it.
After hours of research I finally decided on the OXO Good Grips 3-Blade Spiralizer (#affiliate). So many reviews on other brands commented on poor design, hard to clean, and not effective. This IS NOT the case with this particular model. It works fantastic, is easy to clean, and it suctions to the counter so it doesn’t move around while you use it either.

This Creamy Goat Cheese Greek Zoodle Salad is a great way to experiment with zoodles. Used as an appetizer, side dish or even a stand alone meal. Add some sliced chicken, turkey or even sautéed shrimp on top and you have a great dinner salad.
This zoodle salad uses a few simple ingredients. Zucchini, black olives, goat cheese, cherry tomatoes, seasoning, and a simple Greek dressing. Toss, garnish with some fresh parsley, and you have a delicious creamy salad, bursting with Mediterranean flair.

Creamy Goat Cheese Greek Zoodle Salad
For the Salad:
- 1 pound zucchini (washed & spiralized)
- 8 ounces cherry tomatoes
- 4 ounces black olives (sun dried)
- 3 ounces goat cheese (crumbled)
- 2 tbsp fresh parsley (finely chopped)
For the Dressing:
- 1/3 cup olive oil
- 2 1/2 tsp lemon juice
- 1/2 tsp sugar
- 1/8 tsp black pepper
- 1 tsp greek seasoning
In a cup/bowl whisk together the dressing ingredients and set aside.
Wash and spiralize the zucchini.
Place into a bowl.
Add all the other ingredients (except parsley).
Add the salad dressing and toss.
Garnish with the chopped parsley.
