The easiest way is with a spiralizer. Believe me, I didn’t think I needed this handy dandy kitchen gadget. I know there are ways to make zucchini noodles without a zucchini noodle maker.
I have a mandolin (yup another gadget) that works fairly well. My husband stresses me out when I use it, so I try to make sure he is not around. Too many horror stories seen on MasterChef and Hell’s Kitchen have him hovering over me when I use it.
After hours of research, I finally decided on the *OXO Good Grips 3-Blade Spiralizer. So many reviews on other brands commented on poor design, hard to clean, and not effective. This IS NOT the case with this particular model. It works FANTASTIC. Easy to clean. Suctions to the counter (REALLY WELL) so it doesn’t move around while you use it either.
You can buy ready-made zucchini noodles. Actually now, there are several spiralized veggies available in the grocery store. Get yourself a handy spiralizer and make them. Not only are they fun to make, but you will also save money doing it yourself. Your new kitchen gadget will earn its keep in no time.

- fresh parsley
- Greek dressing (recipe included, but feel free to use store bought if you prefer)

Creamy Goat Cheese Greek Zoodle Salad
Ingredients
For the Salad:
- 1 pound zucchini (washed & spiralized)
- 8 ounces cherry tomatoes
- 4 ounces black olives (sun dried)
- 3 ounces goat cheese (crumbled)
- 2 tbsp fresh parsley (finely chopped)
For the Dressing:
- 1/3 cup olive oil
- 2 1/2 tsp lemon juice
- 1/2 tsp sugar
- 1/8 tsp black pepper
- 1 tsp greek seasoning
Instructions
- In a cup/bowl whisk together the dressing ingredients and set aside.
- Wash and spiralize the zucchini.
- Place into a bowl.
- Add all the other ingredients (except parsley).
- Add the salad dressing and toss.
- Garnish with the chopped parsley.
- ENJOY!!
