    Maple glazed oven roasted vegetables are so delicious. An easy sheet pan vegetable recipe that anyone can master.

    Perfect oven charred veggies make a flavourful side dish for meat or seafood. A great way to enjoy vegetables year round. If you are a fan of grilled veggies, this recipe is a must try.

    Oven roasted vegetables are charred to perfection with a delicious maple glaze. Tender, caramelized, colourful and oh so flavourful. Perfect for weeknights or holidays.

    Roasting vegetables in the oven is so easy, a basic skill every cook needs to master. From making blended cauliflower soup, to oven roasted squash slices, the method is the same. Basically chop, season, roast. With so many veggies and seasoning combinations to choose from, you have lots of tasty options.

    It’s great when you can elevate humble vegetables into delicious and tasty creations. Sometimes you can even convert veggie haters into veggie lovers. Who knew grilled radishes taste so delicious?

    Roasting vegetables brings out their natural sweetness, perfect for picky eaters. It’s also a great way to enjoy vegetables in season like these tasty roasted fiddleheads. If you love making homemade pasta sauce, did you know you can freeze roasted tomatoes? Great for soups, stews and more.

    The best way to cook potatoes is roasting them. The only time I serve mashed potatoes is on the holiday dinner table, or on top of shepherd’s pie. This spiral skillet potato recipe is a crowd pleaser.

    • Cabbage
    • Carrots
    • Oil
    • Seasonings
    • Maple Syrup

    Easy Oven Roasted Vegetables

    When I say easy, I mean super easy. All you have to do is cut, coat and roast. Full instructions are in the recipe card.

    • Prepare your baking sheets and preheat the oven.
    • Wash and cut your veggies and place them in a mixing bowl.
    • Mix oil and seasonings.

    • Coat the veggies with the oil.
    • Spread them on the baking sheets and roast.

    • Part way through, add some maple syrup and toss to coat.
    • Return to the oven until the vegetables are charred to perfection.

    Once they are done, remove from the oven, place in a serving bowl and garnish with additional maple syrup. A flavourful veggie side dish that is perfectly caramelized with a sweet maple glaze.

    Suggestions / Recipe Tips

    To save time, you can buy pre-chopped vegetables, or chop your veggies ahead of time. I even like to roast frozen vegetables, no need to thaw.

    Be sure the vegetables are coated well with the oil mixture. They should have a nice glossy coating. This will help them become crisp and brown.

    Great vegetables to roast are potatoes, cauliflower, carrots, parsnip, squash, sweet potatoes, turnip, beets, beans, zucchini, bell peppers, broccoli, parsnip, onions and cabbage.

    Do not over crowd them on the baking sheet, that is why I recommend using 2 sheets. Crowding the vegetables will steam them not roast them. Be sure the oven is at least 400ºF. Foil lined sheets make cleanup a breeze.

    The cooking times will vary depending the the size and type of vegetables you are using. Keep roasting until you see the charred edges, that is what makes them so tasty.

    Always use good quality oil. You can mix up the seasonings and replace the maple syrup with honey. Hot honey would be a vert tasty alternative.

    Store roasted vegetables in a sealed container in the fridge. For longer storage these can be frozen as well. Easily reheat in the oven.

    Ingredients

    • 16 ounces cauliflower cut into small florets
    • 16 ounces red cabbage thinly sliced
    • 5 ounces carrots sliced
    • 2 ounces olive oil
    • 1 teaspoon smoked sea salt
    • ¼ teaspoon black pepper
    • 2 teaspoons maple sugar
    • 2 tablespoons maple syrup more for garnish is optional

    Instructions

    • Preheat oven to 450ºF. Line 2 baking sheet with foil and coat with cooking spray.
    • Wash and cut all the vegetables and place in a large mixing bowl.
    • Mix the olive oil, salt, pepper and maple sugar together in a small bowl.
    • Add the oil mixture to the veggies, and mix to coat well.
    • Divide the vegetables onto the prepared baking sheets.
    • Roast for 10 minutes.
    • Remove from the oven and drizzle the maple syrup over the vegetables and toss to coat.
    • Return the trays to the oven and roast for another 10-15 minutes until the veggies are nicely charred.
    • Remove from oven, place in a serving bowl and drizzle with more maple syrup (if desired) and serve.

    Notes

    You can use red or green cabbage. 
    Other vegetable options would be Brussels sprouts, broccoli, sweet potatoes, squash, beets or parsnip.
    Honey can be used in place of maple syrup. Hot honey would be a great option.
    Brown sugar, coconut sugar or cane sugar can be used in place of the maple sugar.
