When I was a kid, for some reason my mom never cooked sweet potatoes. I have no idea why. Perhaps with our Ukrainian background, no recipes I know of had them as an ingredient.
Well, I am sure glad I took the plunge and gave these gems a try. Sweet potatoes are such a healthy alternative to regular potatoes. If you have never tried them, you are missing out. Hubby was never a fan of scalloped potatoes, but he sure loves sweet potato au gratin.

Easy Stuffed Jacket Sweet Potatoes
Super easy to prepare with not a lot of prep work or cleanup involved. Full instructions are in the recipe card at the bottom of this post.
- Wash the potatoes, prick them with a fork, and bake in the oven.
- After about 50 minutes, they should have crispy skins and soft insides.
- Remove from the oven, slice, and stuff.

Goat cheese can be replaced with any cheese you like. Feta, Boursin, or cream cheese are great alternatives.
Pistachios are so delicious. Any nut will work. If you need a nut-free version, try adding pumpkin seeds or dried cranberries.
Hot honey is a wonderful ingredient. Regular honey will work, and so will maple syrup and even balsamic glaze.
Serve warm. Leftovers can be stored in the fridge, in a container or wrapped in foil. Reheat in the oven. Be sure to open the foil to crisp up the skins.
What Is A Jacket Potato?
Honestly, it is a fancy name for a baked potato in the UK. Baked until the jackets (or skins) are crispy and the insides are tender. Never cook them in the microwave!
They should not be wrapped in foil, or you will end up with soggy skins. You do not need to oil them either, but this is a personal preference.
Enjoy them with butter, salt, and pepper, or endless tasty topping ideas.
Stuffed Jacket Sweet Potatoes
Ingredients
- 2 sweet potatoes about 8 ounces each
- 2 ounces goat cheese
- 1 ounce pistachios roughly chopped
- 2 tablespoons hot honey melted
Instructions
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment or foil.
- Wash the sweet potatoes, dry, and poke holes in them with a fork.
- Place them on the baking sheet and bake for about 50 minutes. Skins shound be crispy and insides should be soft.
- Remove from oven and place on a serving tray.
- Carefully slice the potatoes (do not cut all the way through), and give them a bit of a squeeze to create a nice open space.
- Layer the goat cheese, followed by the pistachios. Drizzle the melted honey over the top. Potatoes are ready to eat.
