Easy Canned Baked Beans And Sweet Potatoes
I love the fact you can turn a can of baked beans into such a delicious creation. The sweet potato compliments the flavour of the beans so well in this nutritious meal. If you need a vegan version, no problem, just use canned beans without pork.
This is an easy meal, and you can bake the beans and potatoes at the same time. Full instructions are in the recipe card.
- Wash the sweet potatoes.
- Bake in the oven for about 40 minutes.

- Sauté the onion in a pan.
- Add the can of beans and bake along with the potatoes.

- Scoop out the creamy sweet potatoes into a bowl.
- Top with the baked beans and dig in.

Suggestions / Recipe Tips
- Canned baked beans of any flavour will work. Tomato based, maple flavoured, molasses or our favourite campfire beans with Canadian whiskey. If you need a vegan option be sure to pick one with no pork.
- Onion can be white, red or yellow.
- Olive oil can be replaced with avocado oil, or any other cooking oil. Butter is a great too.
- Sweet potatoes can be replaced with russet, red, white or yellow potatoes. You could even bake mini potatoes too.
- Store any leftovers in a the fridge. Reheat in the oven until warm.

To save time, you can always prebake the potatoes. Just heat them up while the beans are baking.

Quick Canned Beans And Sweet Potatoes
Ingredients
- 14 ounces canned baked beans (any flavour)
- 18 ounces sweet potatoes ( 2 medium potatoes)
- ¼ cup diced onion
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400ºF.
- Wash and pierce the potatoes, and place in the preheated oven. (I like to place them on a piece of foil). Bake for about 40 minutes until tender.
- While the potatoes are baking, get the beans ready.
- Add the oil to a frying pan and heat to medium.
- Toss in the diced onions and sauté for about 5 minutes until they start to brown.
- Combine the onions with the can of baked beans into an oven safe dish. Place the dish alongside the potatoes, and bake for about 30 minutes. The beans will be bubbling when they are done.
- Remove the potatoes and beans from the oven.
- Cut the potatoes in half, and scoop out the insides into serving bowls.
- Top the potatoes with the baked beans. Enjoy!
