Wash and pierce the potatoes, and place in the preheated oven. (I like to place them on a piece of foil). Bake for about 40 minutes until tender.
While the potatoes are baking, get the beans ready.
Add the oil to a frying pan and heat to medium.
Toss in the diced onions and sauté for about 5 minutes until they start to brown.
Combine the onions with the can of baked beans into an oven safe dish. Place the dish alongside the potatoes, and bake for about 30 minutes. The beans will be bubbling when they are done.
Remove the potatoes and beans from the oven.
Cut the potatoes in half, and scoop out the insides into serving bowls.
Top the potatoes with the baked beans. Enjoy!

You can use any flavour of baked beans you like.Onion can be white, yellow or red.You can replace the sweet potatoes with white, red or russet potatoes. The potatoes can be baked ahead of time to speed up the time. .
