acket Sweet Potatoes
have crispy skins, creamy insides and loaded with goat cheese, pistachios then drizzled with hot honey. The perfect meal or side.

Ingredients
2
sweet potatoes
about 8 ounces each
2
ounces
goat cheese
1
ounce
pistachios
roughly chopped
2
tablespoons
hot honey
melted
Instructions
Preheat the oven to 425 degrees F. Line a baking sheet with parchment or foil.
Wash the sweet potatoes, dry, and poke holes in them with a fork.
Place them on the baking sheet and bake for about 50 minutes. Skins shound be crispy and insides should be soft.
Remove from oven and place on a serving tray.
Carefully slice the potatoes (do not cut all the way through), and give them a bit of a squeeze to create a nice open space.
Layer the goat cheese, followed by the pistachios. Drizzle the melted honey over the top. Potatoes are ready to eat.
Notes
Perfect as a main dish for dinner. Makes a great side dish too.
