    Noodles and Cabbage Stir Fry is just what you need for busy weeknights. Quick, flavourful, and comes together in under 30 minutes.

    This budget-friendly meal is vegetarian, gluten-free and vegan friendly too. Low fat and veggie packed. Ticks all the boxes, and you can easily swap out ingredients to suit your taste.

    There is just something about a noodle recipe that is so comforting. I do not know a single person that will pass up a meal that includes noodles or pasta. Every culture seems to have their style of tasty recipes to try. Being Ukrainian, egg noodle casserole is our version.

    We love to experiment with Asian inspired recipes. Takeout is so expensive. With a little time in the kitchen, you can make some pretty tasty meals for a fraction of the cost.

    Tasty Fried Cabbage and Noodles

    This comforting stir fry contains healthy ingredients. Be sure to read the suggestions below for some great alternatives.

    • Red cabbage
    • Carrots
    • Bell peppers
    • Green onion
    • Rice noodles
    • Sweet chili sauce
    • Sesame oil
    • Rice crackers

    Easy Noodles and Cabbage Stir Fry

    With a few minutes of prep, your family will be enjoying this easy stir fry meal in minutes. Faster than takeout. Full instructions are in the recipe card.

    • Wash and prep the veggies and set them aside until ready to cook. There is no right or wrong way to slice and dice.
    • Having them ready to use helps being the dish together faster since this is part of the recipe that is the most work.

    • Prep the rice noodles according to package directions.
    • This can be done while you are slicing and dicing the veeggies.
    • You can use a non-stick skillet or wok to cook this stir-fry. Heat the oil and cook the veggies.

    • Toss in the prepared noodles, sauce and green onion. Dinner is ready!
    • Place in serving bowls, garnish and dig in.

    Suggestions/Recipe Tips

    Rice noodles are so easy to prepare. You can use any kind of noodle you like. Udon, soba, and ramen are great for making stir fried noodles. Heck, even cook up some spaghetti if you are in a pinch.

    Sweet chili sauce is easy to find in the grocery store. You can adjust the amount. Need things a little spicer? Add some hot garlic sauce.

    Vegetables and stir-fries go hand in hand. Feel feel to swap out anything you wish. Try using broccoli, mushrooms, zucchini or snap peas.

    Red cabbage adds a nice colour to this dish. Green cabbage, Savoy, Napa, Bok Choy or even Brussels sprouts are great options.

    Protein can be added to this recipe. Chicken, beef, seafood or even tofu are great choices. Be sure to cook the meat first, this can be done in the same skillet or wok.

    Rice crackers a great garnish. You can also use peanuts, cashews, or even crispy chickpeas.

    Store leftovers in a container in the fridge for up to 3 days. Reheat in the oven.

    Ingredients

    • 8 ounces red cabbage thinly sliced
    • 5 ounces carrots thinly sliced
    • 7 ounces bell peppers thinly sliced
    • 1 ounce green onion thinly sliced
    • 8 ounces dry rice noodles
    • 1 ½ tablespoons sesame oil
    • ¼ cup sweet chili sauce
    • 1 ounce rice crackers crushed

    Instructions

    • Wash and slice all the veggies and set aside until ready to cook.
    • Prepare the rice noodles according to package directions and set aside until ready to use.
    • Heat a wok or skillet over medium-high heat, and add the sesame oil.
      1 ½ tablespoons sesame oil
    • Add the cabbage to the wok/skillet and cook for about 3 minutes, until it has softened.
      8 ounces red cabbage
    • Add the carrots, and cook for 3 minutes until the carrots have softened.
      5 ounces carrots
    • Toss in the peppers and cook for an additional minute or so.
      7 ounces bell peppers
    • Add the sweet chili sauce, toss to combine well.
      ¼ cup sweet chili sauce
    • Toss in the prepared noodles combine. Heat for a minute or two so the noodles get warm.
      8 ounces dry rice noodles
    • Remove from heat and add the green onion. Toss to combine.

    • Place in serving bowls, and garnish with the crushed rice crackers and enjoy!

    Notes

    Use any type of cabbage you like. Not into carrots, no problem, broccoli is a great alternative. Snap peas and mushrooms are delicious too. Any colour of pepper is great.
    Increase the amount of sweet chili sauce to your liking. Want a little more heat? Add some hot chili sauce. 
    Rice noodles can be replaced with any kind of noodle you like.
    Want a more substantial meal? Simply add some cooked protein like chicken, seafood or even leftover roast beef or steak.
    If you don’t have any precooked protein, you can cook your protein first in the skillet or wok and set aside. Then proceed with the recipe and add it in at the end.
    Store leftovers in a sealed container in the fridge for up to 3 days.
    Reheat in a covered dish in the oven at about 375º F until heated through.
    Serve with egg rolls or spring rolls.
