Oven roasted vegetables are charred to perfection with a delicious maple glaze. Tender, caramelized, colourful and oh so flavourful. Perfect for weeknights or holidays.

Instructions
Preheat oven to 450ºF. Line 2 baking sheet with foil and coat with cooking spray.
Wash and cut all the vegetables and place in a large mixing bowl.
Mix the olive oil, salt, pepper and maple sugar together in a small bowl.
Add the oil mixture to the veggies, and mix to coat well.
Divide the vegetables onto the prepared baking sheets.
Roast for 10 minutes.
Remove from the oven and drizzle the maple syrup over the vegetables and toss to coat.
Return the trays to the oven and roast for another 10-15 minutes until the veggies are nicely charred.
Remove from oven, place in a serving bowl and drizzle with more maple syrup (if desired) and serve.
Notes
You can use red or green cabbage. Other vegetable options would be Brussels sprouts, broccoli, sweet potatoes, squash, beets or parsnip.Honey can be used in place of maple syrup. Hot honey would be a great option.Brown sugar, coconut sugar or cane sugar can be used in place of the maple sugar.
