    Crisp zucchini noodles, juicy tomatoes, tangy feta, and black olives, all tossed in a Greek salad dressing. Colourful, flavourful, low-carb, vegetarian, the perfect summer salad recipe.

    I am obsessed with zoodles, but it doesn’t stop there. There are so many great spiralized veggie recipes to make. Zucchini, potatoes, cucumbers, carrots, and anything that can get turned into noodles.

    Thick, thin or long shaved strands, new and tasty recipes will be happening in the kitchen. Zoodle spaghetti is fun to make and fun to eat. Just like in this easy Mediterranean zoodle salad recipe.

    Spiral Zucchini Salad Ingredients

    • zucchini
    • black olives
    • cherry tomatoes
    • goat cheese
    • fresh parsley
    • Greek dressing (recipe included, but feel free to use store-bought if you prefer)

    Preparing This Cold Greek Zoodle Salad

    • The first thing you need to do is get the veggies ready. Below I list a few different ways to make spiralized zucchini.
    • Place the zoodles, tomatoes, and olives in a large salad bowl.
    • Add in the creamy goat cheese.
    • Mix up the salad dressing ingredients, pour, toss, and garnish.

    Suggestions/Recipe Tips

    Zucchinis are available all year round. When the growing season is in full swing, muffins, bread, and cakes are just some of the delicious ways to enjoy it.

    Zucchini Burgers are a fun alternative to meat-based burgers. Perfect for BBQ season.

    Refrigerator Zucchini Pickles are a must during grilling season. The perfect topping for burgers, hot dogs, and sausage on a bun.

    Goat Cheese – I prefer sheep milk cheese over the cow milk variety as it seems to crumble nicely. A great alternative would be feta cheese. Vegan cheese is an option as well.

    Black Olives – can be replaced with any type of olive you like. You could even add some capers to the mix.

    Cherry Tomatoes – I really like using these in salads. Any tomato will work. Large tomatoes can be cut into chunks. You may want to remove the pulp and seeds so your salad will not be too watery.

    Oil – olive is my choice for this recipe. Avocado oil is a great option.

    Parsley – Italian flat-leaf, or regular curly parsley will work. Not into parsley? Shred some kale or add some basil.

    Seasoning – store-bought Greek seasoning is readily available. You can even make your own blend of herbs and spices. Italian seasoning is also good.

    Add-Ins – if you want to turn this into a dinner salad, toss in some sliced chicken or turkey. Sauteed shrimp would be great too. Need it meat-free? Chickpeas would be great here.

    Storing – this zucchini salad will keep for 1-2 days in the refrigerator. Best served just after assembly.

    What Is a Zoodle?

    Zoodles have been on the culinary scene for a long time. What a fun way to incorporate nutritious zucchini into healthy zoodle recipes. A veggie alternative to pasta that is low in carbs, keto-friendly, and gluten-free too.

    Do you cook zoodles? They can be eaten raw or slightly cooked.

    The easiest way to make zucchini noodles is with a spiralizer (affiliate link). Believe me, I didn’t think I needed this handy dandy kitchen gadget. I know there are ways to make them without using a spiralizer, but this is the safest way for sure.

    You can buy ready-made zucchini noodles. There are several spiralized veggies available in the grocery store. Get yourself a handy spiralizer and make them. Not only are they fun to make, but you will also save money doing it yourself. Your new kitchen gadget will earn its keep in no time.

    Ingredients

    For the Salad:

    • 1 pound zucchini (washed & spiralized)
    • 8 ounces cherry tomatoes
    • 4 ounces black olives (sun dried)
    • 3 ounces goat cheese (crumbled)
    • 2 tablespoons fresh parsley (finely chopped)

    For the Dressing:

    • ⅓ cup olive oil
    • 2 ½ teaspoons lemon juice
    • ½ teaspoon sugar
    • ⅛ teaspoon black pepper
    • 1 teaspoon greek seasoning
    US Customary – Metric

    Instructions

    • In a cup/bowl whisk together the dressing ingredients and set aside.
      ⅓ cup olive oil, 2 ½ teaspoons lemon juice, ½ teaspoon sugar, ⅛ teaspoon black pepper, 1 teaspoon greek seasoning
    • Wash and spiralize the zucchini, and place in a bowl.
      1 pound zucchini
    • Add all the other ingredients (except parsley).
      8 ounces cherry tomatoes, 4 ounces black olives, 3 ounces goat cheese
    • Add the salad dressing and toss.
    • Garnish with the chopped parsley.
      2 tablespoons fresh parsley

      Gah there are so many mandoline horror stories! I have one from my own kitchen – just moments after I stressed the importance of being careful and working slowly to my friend who was helping me cook for a party. Ay yi yi. That creamy goat cheese dressing, though. That is far from a horror story. Looks so tasty!

      Zoodles are so much fun to make. I use my spirlizer just cause I think it’s easier to use in my opinion. When it comes to using the mandoline I let the husband do that. This salad has all the flavors I love. Will need to try this soon!

      I am seriously starting to reconsider to get a spiralizer. Somehow they haven’t appeared yet here around or online. Love the look of your salad, that would be a perfect summer time refreshing and healthy salad idea.

      I’m always in a big dilemma… to buy or not to buy a spiralizer… I do zoodles with the mandoline still but this triangle shape version of yours makes me want to convert. Without saying the dish looks delish!!! I’m a BIG fan of goat cheese! I would put it in everything if I could… now I got to try a new way to use my favorite cheese! Yummy!
