    Greek cucumber and tomato salad is perfect for summer parties. Fresh, healthy and so easy to prepare.

    Crisp cucumbers and juicy tomatoes are always a hit, especially during the summer when the gardens and markets are full of fresh vegetables.

    Refreshing cucumber tomato salad with a simple dill and feta vinaigrette. Flavourful, and so easy to make. The perfect side at any BBQ party.

    When it comes to summer eating, less is more. Simple and easy to make recipes are a must. Salads are a staple for sure. We enjoy them as side dishes, or lots of time the main dish, especially when the temperature is scorching outside. The last thing I want to do is spend time in the kitchen cooking.

    If you have a garden (or a neighbour that has one), all of a sudden you are swamped with fresh vegetables. Tomatoes and cucumbers just seem to magically appear on my doorstep LOL.

    Cucumbers are so versatile, and they make great pickles too. The best part is they are super healthy. I love drinking cucumber water when I go to the spa, so refreshing.

    You can never go wrong with a simple cucumber salad any day of the week. Smoked salmon with cucumber noodles are perfect for dinner on a hot summer day. Stuffed cucumbers make great appetizers too.

    When it comes to tomatoes, you can’t beat sun-ripened fresh from the garden flavour. Super juicy, super delicious. I cannot even count how many tomato and cheese sandwiches we eat during the summer. Fresh tomato bruschetta is always a hit.

    • cucumbers
    • tomatoes
    • dill
    • oil
    • vinegar
    • lemon juice
    • feta
    • black pepper

    Easy Cucumber Tomato Salad With Feta

    This Mediterranean inspired salad comes together in minutes. The best part is you can make it ahead of time. Full instructions are in the recipe card.

    • Wash and cut the tomatoes and cucumbers and place them in a bowl.
    • Mix the salad dressing.

    • Toss the salad with the vinaigrette.
    • Add the the feta and dill.

    This simple salad with cool cucumbers and juicy tomatoes tastes best when it sits for at least 30 minutes to allow all the flavours to combine.

    Suggestions / Recipe Tips

    • Mini cucumbers or English cucumbers work best for this salad. If you are using regular garden cucumbers, you will want to peel them as the skin is pretty tough to eat.
    • Tomatoes of any kind will work. I love using cherry or grape tomatoes, but you can chop up any variety you have.
    • Fresh dill works best. If you are in a pinch, dried dill will work, but you will use a lot less in the recipe. You can also try other herbs like chives, thyme, oregano or parsley. Did you know you can freeze fresh herbs in cubes? Great for using in recipes.
    • Oil and vinegar make a simple salad dressing in minutes. I like the combination of olive oil and white balsamic, but feel free to use any combination you like.

    Ingredients

    • 8 ounces cucumbers diced
    • 4 ounces mini tomatoes halved
    • 2 tablespoons olive oil
    • 1 teaspoon lemon juice
    • 1 teaspoon white balsamic vinegar
    • 1 ounce feta cheese crumbled
    • 2 teaspoons fresh dill chopped
    • ⅛ teaspoon black pepper

    Instructions

    • Wash the cucumbers and tomatoes. Cut and place in a bowl.
    • Crumble the feta cheese and set aside.
    • Chop the dill and set aside.
    • Mix the oil, lemon juice and vinegar together.
    • Add the vinaigrette to cucumbers and tomatoes. Toss to coat.
    • Add the feta, dill and black pepper. Toss to coat.
    • Let the salad sit for at least 30 minutes in the fridge.
    • Serve.

    This salad is great for making ahead of time. It will last in the fridge 3-4 days.
    I like mini cucumbers, but any cucumber will work.
    Mini, grape or cherry tomatoes are great. You can also chop large tomatoes up for this salad as well.
    Fresh dill works best, but you can use dried dill (use less).
    Try other herbs like oregano, thyme or parsley
