We enjoy them as side dishes, or lots of time the main dish, especially when the temperature is scorching outside. The last thing I want to do is spend time in the kitchen cooking.

Easy Cucumber Tomato Salad With Feta
This Mediterranean inspired salad comes together in minutes. The best part is you can make it ahead of time. Full instructions are in the recipe card.

- Wash and cut the tomatoes and cucumbers and place them in a bowl.
- Mix the salad dressing.

- Toss the salad with the vinaigrette.
- Add the the feta and dill.
This simple salad with cool cucumbers and juicy tomatoes tastes best when it sits for at least 30 minutes to allow all the flavours to combine.

Suggestions / Recipe Tips
- Mini cucumbers or English cucumbers work best for this salad. If you are using regular garden cucumbers, you will want to peel them as the skin is pretty tough to eat.
- Tomatoes of any kind will work. I love using cherry or grape tomatoes, but you can chop up any variety you have.
- Fresh dill works best. If you are in a pinch, dried dill will work, but you will use a lot less in the recipe. You can also try other herbs like chives, thyme, oregano or parsley. Did you know you can freeze fresh herbs in cubes? Great for using in recipes.
- Oil and vinegar make a simple salad dressing in minutes. I like the combination of olive oil and white balsamic, but feel free to use any combination you like.

Let this salad sit for at least 30 minutes before serving. It will last for up to 4 days in the fridge. Just what you need for summer eating and parties. Easy and delicious.

Cucumber Tomato Salad With Feta
Ingredients
- 8 ounces cucumbers diced
- 4 ounces mini tomatoes halved
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 1 teaspoon white balsamic vinegar
- 1 ounce feta cheese crumbled
- 2 teaspoons fresh dill chopped
- ⅛ teaspoon black pepper
Instructions
- Wash the cucumbers and tomatoes. Cut and place in a bowl.
- Crumble the feta cheese and set aside.
- Chop the dill and set aside.
- Mix the oil, lemon juice and vinegar together.
- Add the vinaigrette to cucumbers and tomatoes. Toss to coat.
- Add the feta, dill and black pepper. Toss to coat.
- Let the salad sit for at least 30 minutes in the fridge.
- Serve.
