    Ukrainian Traditional Egg Noodle Casserole

    This Traditional Egg Noodle Casserole is one of my favourite childhood memories.

    Baked egg noodles that I called Ukrainian pasta! Noodles, eggs, and milk can create some magic in the kitchen. Baba knew what she was doing.

    She would also be impressed with my version of lazy cabbage rolls. All the flavour of traditional cabbage rolls without all of the work.

    Baba would have this ready for me as an after school treat. How I miss her cooking. This noodle casserole brings back so many wonderful memories.

    I am a pasta girl for sure. From spaghetti to gnocchi, macaroni salad to everyone’s favourite mac and cheese.

    RECIPE and INSTRUCTIONS for this baked noodle casserole are at the bottom of this post.

    When you were a kid, what was your go-to snack after school? Cake, cookies, chips? Mine was egg noodle casserole! I am totally serious.

    Savoury food all the way for me. I do enjoy desserts (who doesn’t), but given the choice between freshly baked cookies or fresh baked bread, bread wins hands down.

    Simple Ingredients

    It really does not get easier than this. For this baked noodle recipe you will need:

    • egg noodles
    • eggs
    • milk
    • salt

    Everyone has eaten casseroles with noodles. You know the ones I am talking about.

    • hamburger casseroles
    • chicken noodle casserole
    • tuna noodle casserole

    Do these bring back memories? Noodle dinner recipes that were (or even still are) family favourites. The perfect casserole to take to pot lucks and family gatherings. Did you like crushed potato chips on your noodle casserole?

    And we cannot forget to mention chicken noodle soup! Always a must for when you are feeling under the weather. It works like magic.

    I also remember potato casseroles too. Sweet Potato Au Gratin is the ultimate comfort food. Thinly sliced sweet potatoes, covered in cream and topped with cheese. What is not to love?

    How To Make Ukrainian Egg Noodle Casserole

    This really is a simple noodle recipe to put together.

    1. Cook egg noodles “al dente”
    2. Combine cooked noodles with eggs, milk, and seasonings.
    3. Place in a greased casserole dish.
    4. Bake.
    5. Enjoy!

    The milk and eggs form sort of custard as the casserole bakes. The noodles on top get nice and crunchy (the best part). Once baked you can eat this warm, but I even eat it cold.

    How Long Does It Take To Cook Egg Noodles?

    This type of noodle cooks quickly. Overcooking will produce soggy, mushy noodles.

    Use a large pot of boiling water. The noodles need space to cook properly.

    Fresh noodles will cook in about 3-4 minutes. Dried, store-bought variety will take 5-7 minutes, depending on the thickness of the noodles.

    Have you ever tasted homemade egg noodles? I sure hope so. Baba’s were THE BEST EVER. My mom could churn these out too, but there is that special touch only baba’s (or grammas) have. Something I am striving to achieve for my grandkids.

    She also made the best pierogies too. You know the stuffed Ukrainian pasta. You NEED to make this creamy Pierogi Sauce. It is THE BEST topping ever.

    Baba was a culinary master. Her homemade sauerkraut beat anything you could buy in the store. I would love to use it in my kapusta recipe.

    She also made the best side dish we like to call Ukrainian dill potatoes. Perfect for steak, chicken and more.

    This Ukrainian pasta bake is also known as kugel (the Jewish version) or pastiera, the traditional Easter egg noodle pudding found on the Ukrainian and Italian tables. They can also be referred to as kluski.

    Another version is baked lokshyna. A casserole with egg noodles, cottage cheese and bacon. Typical Ukrainian comfort food.

    I bake my noodles in a glass baking dish. That is how mom did it. There is something about seeing those nice brown edges through the glass.

    Ukrainian Baked Egg Noodle Casserole

    Baked Egg Noodle Casserole is a recipe from my childhood. Egg noodles baked with milk and eggs produce a custard like centre with a crunchy top. This was my favourite after school snack.

    Ingredients

    • 12 ounces egg noodle
    • 6 eggs
    • 2 cups milk
    • ½ teaspoons smoked sea salt
    US Customary – Metric

    Instructions

    • Preheat oven to 350ºF
      Grease a 9×13 baking dish/pan
    • Cook egg noodles according to package directions.
    • Drain, and rinse with cold water.
      Place cooked egg noodles into the greased baking dish.
    • Whisk together the eggs, milk and salt.
    • Pour evenly over the noodles in the baking dish.
    • Slightly press down the noodles into the liquid.
    • Bake in oven until set, and top is nicely browned (that is the best part). Approximately 45 minutes.
    • Cut into squares. Can be eaten hot or cold.
    • ENJOY!

      My Ukrainian Grama always made it with ground pickling spice and homemade noodles. It was always a savory dish not a sweet one. I remember the noodles drying on many tea towels. We called it Kee-sta…not sure of the spelling. I miss her like crazy. I miss her cooking cuz it just tasted like nothing else. Might have to make some this weekend.

      This is so good and typical of Ukrainian dishes that help to stretch a budget. We had plenty of meatless soups and casseroles that are so good that nobody misses any expensive ingredients. (Dobra!) I). I am 100% Ukrainianand we always called grandmothers “Babco,not Baba. Maybe it’s a regional difference

        Well my mom was from Saskatchewan and my dad from Manitoba. Baba was the name in both places. You are right about simple ingredients and making delicious dishes for families to enjoy.

      My absolute favorite as well. My Mama would also add a layer of sliced apples tossed with cinnamon and sugar with half the noodles on the bottom and half on top also sprinkled with a little sugar. The crunchy top was my favorite as well. Still have Mama’s glass baking dish just for this purpose.

        Yes, I use the glass dish too. I have not tried the sweet version, but this is such a childhood memory…and so delicious.

      My baba use to make this casserole with her freshly made noodles too. I wasn’t old enough at the time to ask for the recipe, but the memories of eating this are still clear as a bell. Over the years, I have asked everyone of Ukrainian background if they knew this recipe, but nobody did. It wasn’t till today Dec. 7/18 that a friend found this recipe for me. My baba always used rendered down pork fat in most of her cooking, which added so much flavour to her meals. I know she must have used it in this noodle casserole. It wouldn’t have been a lot, but oh, that flavour. Maybe she greased her pan down with it, but I have no one to ask now. What do you think?

        Aw yes, the pork fat. She used to keep it in a can. I would take a guess that she did use it. I know it would work!! So glad this recipe brings back the same memories for you as it does for me. This is a keeper, right from the heart.

      I’ve never had egg noodle casserole before…which is crazy, because I love egg noodles; and this recipe is about as easy as it gets! I’ve also never had homemade egg noodles, but I’m sure they are amazing. Definitely trying this recipe

      I too also enjoyed this as a child. My Baba called it Kiesta. I still make it today. I add ground pickling spice as she did. I love it cold the best. My Baba always made her noodles as well. I remember hundreds of noodles rolled and cut by hand drying on sheets and rea towels all over her house. I knew it was not long before I’d be eating this extremely yummy comfort food. How I miss my Baba!!!!!

      This was one of my MIL’s Easter dishes and I have continued as my kids love it so now I’m making it for my Grandkids. Baba always added a bit of sugar and cinnamon which makes it delicious, delicious! Thanks for posting!

      Yum! While I’ve never heard of this dish I would definitely be up to eating some. These egg noodles are my favorite. We used to eat them with just butter and parmesan all the time as kids.
