Potatoes with Green Onion and Dill have been a family favourite for decades. We call them Ukrainian dill potatoes.
A simple and delicious side dish. Potatoes smothered in a dill and green onion sauce.
Oh, those wonderful childhood memories. Baba and mom would make these with ingredients from the garden.
New potatoes, dill, and green onion picked fresh that day. Coming from a Ukrainian family, all the wonderful ladies had huge gardens.
Every summer we would have an annual BBQ at Auntie Chris’s house. Uncle Nick would work his magic on the wood-fired BBQ cooking up some juicy steaks. To go along with them this dill potato recipe was a must.
Speaking of childhood food memories, the traditional Ukrainian Cheesecake served at Easter is still served in my house. Made with dry curd cottage cheese, this is a healthy version of a classic dessert.

I love the aroma of fresh dill. It pairs beautifully with potatoes and smoked salmon. Here are some great ways to enjoy it:
This Dill Potato Recipe Needs:
- Potatoes
- Dill
- Green Onion
- Butter
- Salt and Pepper
Basic, simple humble garden ingredients are so great to work with. Lucky we can get all of these at the grocery store. Thank goodness since I don’t have a garden.
Preparing Potatoes With Green Onion And Dill Sauce
I have stayed true to the recipe (well 99% true). This dish was always prepared with boiled new potatoes, but perhaps you’ve noticed in my recipes I don’t boil vegetables. I mentioned this in my Roasted Fiddlehead Ferns recipe, and unless I am making mashed potatoes, I just don’t boil vegetables.
My version of this recipe includes baking the potatoes instead of boiling them. Full instructions are in the recipe card below.
- Wash and roast the potatoes. When they are done, let them sit for a bit to cool. You don’t want to burn your fingers as you cut them into chunks.
- Finely chop the dill and green onion.
- Melt the butter in a pan, and quickly cook the onion for about 2 minues.
- Remove from heat, and add the dill.
- Pour the dill sauce over the cooked potatoes.
- Season with salt and pepper.
- Serve.
The aroma of the onion and dill is so fragrant, and the taste is mouthwatering. Alongside a steak, this would give any potato dish a run for their money. It goes well with all meats and fish and seafood too.
Suggestions/Recipe Tips
Potatoes – Any kind of potato will work in this recipe. If they are new potatoes, I don’t even peel them. Mini potatoes are another option for making this recipe.
Butter – Always great in any sauce. You can replace it with sunflower oil, olive oil or avocado oil.
Green Onion – I used both the white and green parts of the onion. Scallions are basically the same. You could also use chives.
Storage – These potatoes will keep for several days in the fridge in a sealed container.
Reheat – They reheat beautifully. I like to place in a foil-covered baking dish in a moderate oven until heated through. You can also use the microwave if you prefer.
Potato FAQ
Want extra crispy roasted potatoes? This is what you need to know.
This is not necessary, but it will produce crispy skin on the outside.
If you place cut potatoes in a cold water bath before roasting, it will rinse off extra starch and help them crisp in the oven. Let them sit in the water for about 30 minutes.

Ukrainian Dill Potatoes
Ingredients
- 3 pounds new potatoes
- 2 tablespoons fresh dill chopped
- 3 green onions finely diced
- ¼ cup butter
- Salt & pepper to taste
Instructions
- Preheat oven to 400º F.
- Wash, dry and prick potatoes.3 pounds new potatoes
- Place in a baking dish and cook until done (about 1 hour).
- When done, remove from oven and set aside to cool slightly.
- Cut potatoes into chunks (while they are warm) and place in serving bowl.
For the Sauce:
- Finely chop the green onion and dill.2 tablespoons fresh dill, 3 green onions
- Heat butter in a small pan.¼ cup butter
- When hot, add green onion and cook for 2 minutes.
- Remove from heat and mix in dill.
- Pour sauce over top.
- Season with salt and pepper.Salt & pepper
