    Ukrainian Dill Potatoes

    This dill and onion potato recipe has been in the family for generations. We call them Ukrainian dill potatoes.

    A simple and delicious side dish made with 4 ingredients. One of my most loved Ukrainian recipes.

    Roasted potatoes covered in a green onion and fresh dill sauce. A simple and rustic Ukrainian recipe that is the perfect side dish to meat and fish.

    Oh, those wonderful childhood memories. Baba and mom would make these with ingredients from the garden. New potatoes, dill, and green onion picked fresh that day. Coming from a Ukrainian family, all the wonderful ladies had huge gardens.

    Every summer Uncle Nick would work his magic on the wood-fired bbq cooking up some juicy steaks. To go along with them this dill potato recipe was a must.

    Speaking of childhood food memories, the traditional Ukrainian Cheesecake served at Easter is still served in my house. Made with dry curd cottage cheese, this is a healthy version of a classic dessert.

    Simple Dill Potato Ingredients

    Basic, simple humble garden ingredients are so great to work with. Lucky we can get all of these at the grocery store.

    • potatoes
    • fresh dill
    • green onion
    • sunflower oil
    • salt and pepper

    Authentic Ukrainian Dill Potaotes

    I have stayed true to the recipe (well 99% true). This dish was always prepared with boiled new potatoes, but perhaps you’ve noticed in my recipes I don’t boil vegetables. I mentioned this in my Roasted Fiddlehead Ferns recipe, and unless I am making mashed potatoes, I just don’t boil vegetables.

    My version includes roasted potatoes. Full instructions are in the recipe card below.

    Roasting potatoes to make Ukrainian recipe.
    • Wash and roast the potatoes in foil.
    Dill sauce for Ukrainian potatoes.
    • Finely chop the dill and green onion.
    • Heat the sunflower oil in a pan, and quickly cook the onion for about 2 minues.
    • Remove from heat, and add the dill.
    Roasted potatoes with green onion and dill sauce.
    • Pour the dill sauce over the cooked potatoes.
    • Season with salt and pepper.
    • Serve.

    The aroma of the onion and dill is so fragrant, and the taste is mouthwatering. Alongside a steak, this would give any potato dish a run for their money. It goes well with all meats and fish and seafood too.

    Suggestions / Recipe Tips

    Potatoes – Any kind of potato will work in this recipe. If they are new potatoes, I don’t even peel them.

    Sunflower Oil – You can replace it with avocado oil, olive oil or even butter.

    Green Onion – I used both the white and green parts of the onion. Scallions are basically the same. You could also use chives.

    Fresh Dill – This is a must, dried dill will not nearly be as flavourful.

    Storage – These potatoes will keep for several days in the fridge in a sealed container.

    Reheat – They reheat beautifully. I like to place in a foil-covered baking dish in a moderate oven until heated through. You can also use the microwave if you prefer.

    Ukrainian Dill Potatoes

    A classic Ukrainian potato recipe. Roasted potatoes topped with a fresh dill and green onion sauce.

    Ingredients

    • 1 pound mini potatoes washed
    • 1 ½ tablespoons fresh dill chopped
    • 1 ounce green onions finely diced
    • ¼ cup sunflower oil
    • salt & pepper to taste
    US Customary – Metric

    Instructions

    For the Potatoes:

    • Preheat oven to 400º F.
    • Wash, dry potatoes.
      1 pound mini potatoes
    • Wrap in foil and bake until tender (about 40 minutes).

    For the Sauce:

    • Finely chop the green onion and dill.
      1 ½ tablespoons fresh dill, 1 ounce green onions
    • Heat oil in a small pan.
      ¼ cup sunflower oil
    • When hot, add green onion and cook for 2 minutes.
    • Remove from heat and mix in dill.

    To Serve:

    • Place roasted potatoes in a bowl.
    • Pour dill sauce over top, season with salt and pepper. Combine to coat the potatoes. Serve.

    Notes

    Adjust the amount of dill, green onion and oil to make the sauce. More or less of any of the ingredients to suit your liking.
    You can replace the oil with butter.
    Store in a sealed container in the fridge for up to 4 days.
    Reheat in the oven until hot.

      I love potatoes too! I was just at the farmer’s market yesterday and saw(and smelled) fresh dill . I will have to pop back over there to grab some fresh dill to try this recipe out.
