Herb Roasted Olives In A Snap
Sometimes I find I need an appetizer idea in a hurry. Like when you get some unexpected company, and they are staying long enough to warrant some food and drinks. This is the perfect recipe, and impressive too.
Full instructions are in the recipe card. The condensed version is combine the ingredients, bake, and serve! If you have never had warm olives, you will be amazed at how good they are.
Serve them alongside some fresh bread with dipping oil, or add them to a quick charcuterie board with cheese and crackers.
Suggestions / Recipe Tips
- You can use any type of olive you like. Black, green, pitted, or with pits. Whole are best, but sliced will be delicious as well. You will have to lessen the cooking time.
- Cooking oil can be any kind you like.
- Greek seasoning can be replaced with any dried blend. Try Italian or make your own combination. Thyme, oregano, garlic powder, chili flakes, rosemary, or anything you like.
- Replace dried herbs with fresh herbs and garlic cloves. Rosemary sprigs and lemon wedges would be awesome in this recipe.
- Serve warm or cold.
- Store leftovers covered in the fridge for up to 5 days. Leftovers can be reheated as well.

Herb Roasted Olives
Ingredients
- 6 ounces pitted green olives drain the juice/brine
- 1 tablespoon olive oil
- ½ – 1 teaspoon Greek seasoning
Instructions
- Preheat oven to 400ºF.
- In a baking dish combine the olives, oil and seasoning. Mix well to coat
- Roast for about 20 minutes. Be sure to mix once or twice during cooking.
- Remove from oven and serve. They can be eaten warm or cold.
