Baked Feta Ingredients
You only need a few ingredients for this unique fruit and feta cheese recipe. Be sure to read the suggestions and recipe tips below.
- feta (should be at least a ½ inch thick, bring to room temperature before baking)
- strawberries
- sugar
- basil
- balsamic vinegar
- oil
- balsamic glaze
Balsamic Strawberries And Feta
Super easy to make. You will impress your family and friends with this delicious summer recipe. Full instructions are in the recipe card.
Make the strawberry topping first. The berries need to marinate in the balsamic vinegar and sugar to bring out the flavours.
Pat the block of feta cheese with a paper towel to absorb the brine. Coat it with oil. I like to use a pasty brush to spread the oil on the cheese.
Place in the preheated oven, and bake until it is warm.
Remove from the oven and top it with the strawberry salsa topping. Serve with crackers, pita chips or slices of baguette.
Suggestions / Recipe Tips
- Feta can be any kind. Both in brine and dry will work. Goat milk feta melts easier. Sheep milk feta tends to hold it’s shape (like in this recipe). Feta will not melt like cheddar, but will soften. Be sure the block of cheese is at least ½ an inch thick. You can bring the cheese to room temperature before putting it in the oven. If you use it right out of the fridge, it may take a few minutes longer in the oven.
- White balsamic has a sweetness that really compliments the berries. Feel free to replace it with regular balsamic. Whichever one you choose, make sure it is a good quality vinegar.
- Fresh strawberries are just what you need for this fruit salsa. You can even try adding some fresh raspberries or blueberries to make it mixed fruit salsa.
- Adjust the amount of sugar according to the sweetness of the berries. Be sure to make the topping and let it sit for at least 15 minutes.
- Basil can be replaced with mint. Use as much or as little as you like. Dried herbs will not be as tasty, if you do use them be sure to adjust the amount (use less).
- Balsamic glaze is easily found in grocery stores. It is a condensed version of balsamic vinegar. Feel free to make your own. Add 1 cup balsamic vinegar to a small saucepan. Bring to a boil medium-high heat. Reduce the heat to medium-low, and cook until thickened for about 15 minutes. When done, it should nicely coat the back of a spoon.
- Olive oil works well, but avocado oil is a great alternative.
- Store leftovers covered or in a sealed container in the fridge for up to 2 days. You can reheat, or eat it cold.

Baked Feta With Balsamic Strawberries
Ingredients
- 5 ounces fresh strawberries wash, hulled and chopped
- 5 ounces block feta cheese patted dry
- 2 teaspoons olive oil
- 1 teaspoon granulated sugar
- 1-2 tablespoons fresh basil chopped
- 1 tablespoon white balsamic vinegar
- 2 teaspoons balsamic glaze for garnish
Instructions
- Preheat oven to 400ºF and spray a small baking dish with cooking spray.
Make Balsamic Strawberries:
- Wash, hull and chop strawberries. Place in a mixing bowl.
- Add the sugar, white balsamic and chopped basil. Mix well and let rest.
Heat Feta:
- Place the block of feta in the prepared baking dish. Brush with the olive oil. Bring the feta to room temperature for about 30 minutes before baking (see note).
- Bake in preheated oven about 15 minutes. Feta will be warm, but it will not melt.
- Remove from oven.
Top and Serve:
- Top the warm feta with the marinated strawberries.
- Garnish with balsamic glaze.
- Serve with crackers, pita chips or bread.
