Preheat oven to 400ºF and spray a small baking dish with cooking spray.
Make Balsamic Strawberries:
Wash, hull and chop strawberries. Place in a mixing bowl.
Add the sugar, white balsamic and chopped basil. Mix well and let rest.
Heat Feta:
Place the block of feta in the prepared baking dish. Brush with the olive oil. Bring the feta to room temperature for about 30 minutes before baking (see note).
Bake in preheated oven about 15 minutes. Feta will be warm, but it will not melt.
Remove from oven.
Top and Serve:
Top the warm feta with the marinated strawberries.
Garnish with balsamic glaze.
Serve with crackers, pita chips or bread.

Notes
Bring the feta to room temperature (about 30 minutes) before baking. If you use it right out of the fridge, you may have to bake it a few minutes longer.You can adjust the amount of sugar, vinegar and basil to suit your taste. If the berries are not very sweet, add more.Fresh basil can be replaced with mint.White balsamic and be replaced with regular balsamic. Be sure to use a good quality vinegar.Store leftovers in a covered/sealed container in the fridge. It can be rewarmed, or eaten cold.
