Fresh Apple Muffins with Toffee Topping

Do you remember toffee apples when you were a kid? These Fresh Apple Muffins with Toffee Topping just might bring back those memories.

Fresh apples are in season. This easy muffin recipe is just what you need. Apple and toffee topped muffins perfect for Fall (or any season of the year).

Were you one of those lucky kids who had a neighbour that made toffee apples at Halloween? You had to RUN to that house FIRST to make sure you got yours. I remember those days.

Do you love a fresh apple crumble muffin? Eating it slightly warm? The aroma as it bakes is so heavenly.

We all know apples and cinnamon are a winning combination. Using fresh apples (as opposed to applesauce) in muffins is so delicious.

Oatmeal apple muffins are a hit in our house, especially when we have muffins for breakfast. Apple Fig & Oatmeal muffins are one of our favourites this time of year.

With the cooler weather on the way, the fall flavour season is here. Pumpkin and apple recipes are flooding social media right now, and rightly so. I happen to think this particular flavour season rocks. You can never have too many delicious recipes this time of year.

For Toffee Apple Muffins You Will Need:

The whole idea around this recipe for apple muffins was to get the taste of toffee apples without the sugar rush (and perhaps losing a couple of fillings from my teeth along the way).

  • fresh apples
  • milk
  • butter
  • flour 
  • (affiliate)*maple syrup
  • graham cracker crumbs
  • eggs
  • baking powder
  • salt
  • cinnamon
  • (affiliate)*Skor Bits (the awesome toffee topping)

Toffee bits are so good. I can eat them by the handful (and do). What a great way to get that toffee taste in recipes, and the perfect topping on muffins. Makes them taste like a toffee apple cake.

If you prefer, you can always choose other muffin toppings. These fresh apple muffins would also be delicious with a crumble topping or streusel topping. 

You can never go wrong with cinnamon and brown sugar as a topping. If works perfectly on Cinnamon Coffee Cake.

How To Make Fresh Apple Muffins From Scratch

If you are new to baking, muffins are a great place to start. It’s like making mini apple cakes. With a bit of peeling, dicing, and mixing, you will master this easy muffin recipe in no time.

  1. Peel and dice the fresh apples and place them in a bowl.
  2. Preheat your oven and prepare your muffin tins. I prefer to line them with (affiliate) muffin cups.
  3. Combine all the dry ingredients in a large bowl.
  4. Combine all the wet ingredients in a bowl.
  5. Mix the wet and dry ingredients together.
  6. Fold in the apples.
  7. Scoop the batter into the muffin tin (about ⅔ full).
  8. Top with the toffee bits.
  9. Bake.
  10. Cool
  11. Eat!!

How long will muffins stay fresh after baking?

Usually about 1-2 days.

How do you store muffins?

You can store them for about 4 days in an airtight container. Do not refrigerate muffins as it will make the dry out.

Can you freeze muffins?

You can freeze muffins for up to 3 months. I like to individually wrap them in plastic and place them in a freezer bag. This way I can take out the amount I need. Thaw at room temperature.

How do you warm muffins?

You can heat them in the microwave on a medium setting for about 20 seconds. You can also wrap them in foil and warm them in the oven on a medium heat for 4-5 minutes.

Can I substitute applesauce for diced apples?

Yes you can. One apple is roughly 3 ounces of applesauce.

Which Apples Are Best For Muffins

We love visiting the local Ontario apple orchards this time of year. Freshly picked apples are super healthy and delicious. Our favourites are Honey Crisp and Courtland.

I prefer an apple that keeps a firm structure during the baking process. Each area has lots of great varieties to choose from. Even your local supermarket will have apples from other regions.

Ingredients

  • 1 ¼ cups Fresh apple (peeled & diced)
  • 1 ¼ cups milk
  • ½ cup butter (melted)
  • ⅓ cup maple syrup
  • 1 ½ cups graham cracker crumbs
  • 1 ½ cups all-purpose flour
  • 1 egg
  • 1 tablespoons baking powder
  • 1 teaspoons cinnamon
  • ½ teaspoons salt
  • ½ cup Skor Toffee Bits (for topping)

Instructions

  • Preheat oven to 400º F and line muffin tin with liners (or use silicone muffin cups).
  • Peel apples, core and dice. Set aside.
  • In a bowl beat the egg, add milk, melted butter, maple syrup and graham crumbs. Mix to combine.
  • In another bowl whisk the flour, baking powder, salt and cinnamon.
  • Add the wet mixture to the dry mixture, and stir to moisten.
  • Fold in the apples.
  • Scoop batter into muffin cups.
  • Top with Skor bits.
  • Bake for approximately 18-20 minutes.
  • Remove from oven. Let cool slightly in pan. Transfer to cooling rack.
  • ENJOY!!

Notes

You can use any apple variety you like. In this recipe I diced the apples because I like chunks of fruit, but feel free to grate the apple if you prefer.

    I’m so excited for fall, and apple treats are at the top of my list! I don’t often bake with apple because my hubby isn’t a fan. But with the toffee bits baked into these muffins, I won’t have any trouble getting him to eat apple muffins!

    I love that these muffins use fresh apples because I see them popping up at the farmers’ market these days and it makes me excited for fall! The Skor Toffee Bits really send these muffins over the top too. Can’t wait to smell these in my oven!

    Adding toffee bits to apple muffins is downright genius! I bet these totally have that candy apple vibe going for them. Perfect timing with fall right around the corner. (Finally!) I can’t wait to make a batch of these. I love any excuse to use up those little toffee bits 😉

    Loving the apple kick you’re on! The idea of a simple muffin with the taste of a toffee apple has all kinds of appeal. Your thoughts about neighbours and changing trends was interesting to read too. We’ve moved around so much over the last 10 years that it’s hard to really feel like you’ve established much of a connection with neighbours, and I think a lot of people feel like that these days. That being said, bringing over a plate of these seems like a perfect way to get to know the neighbours a little better!
