    Do you like fish and potatoes? Do you like fish and chips? Well, think of this potato salad as an upscale version. I even made this into a potato appetizer too!

    I am a potato lover and always will be. There are never too many ways to enjoy them. Mashed to baked, potato pancakes to crispy fries, they are all delicious. Have you tried my fish cakes recipe? These are great as a main dish, but also a fun appetizer.

    When I was a kid, each summer we would have a huge family BBQ. The highlight of the meal (in my opinion) was the Potatoes with Green Onion & Dill.

    Salmon With Potato Salad

    This salmon potato salad only needs a few ingredients:

    • mini potatoes
    • smoked salmon
    • green onion
    • fresh dill
    • butter
    • oil
    • salt and pepper

    Salmon is the seafood of choice in our family. Now that grilling season is here, cedar-planked salmon will be happening throughout the summer. Homemade salmon burgers are always a hit too. I love using dill out of my garden herb box too.

    Warm Potato Salad For Dinner

    This salad is so easy. Full directions are in the recipe card below.

    Baby potatoes in a foil packet, dill and onions cooking in a frying pan.

    Wrap some potatoes in foil and bake. Heck, you can even do this on the grill. When they are done, keep them wrapped until ready to use.

    In a frying pan heat some olive oil and butter. Add some chopped green onion and lots of fresh dill.

    The dressing takes minutes to make. Open the foil pack, put the potatoes in a bowl, and pour the aromatic warm dill sauce over the potatoes. Top with thin slices of smoked salmon and some fresh ground pepper. Dinner is ready.

    Do you like smoked salmon? It can be used in so many ways. Great for breakfast on bagels, or as a topping on crackers or crostini.

    Suggestions/Recipe Tips

    Mini potatoes are great to work with. You can also regular-sized potatoes. Just cut them up before cooking. No need to peel. Bake the potatoes wrapped in foil in the oven or on the grill.

    Fresh dill is best for this recipe. You can use dried, but much less is needed. Green onion can be replaced with chives.

    Smoked salmon pairs perfectly with potatoes. If you are not a fan of smoked salmon, you can add some grilled salmon instead. Not a salmon lover? Try adding shrimp or chicken.

    Store leftovers in a sealed container in the fridge for up to 3 days. Reheat easily wrapped in foil in a moderate oven for about 20-30 minutes.

    Ingredients

    • 2 pounds mini potatoes
    • 150 grams smoked salmon
    • Β½ ounce fresh dill (more for garnish)
    • 1 ounce green onion
    • 2 tablespoons butter
    • 1 Β½ tablespoons olive oil
    • salt & pepper (to taste)

    Instructions

    • Wash potatoes, cut in half and wrap in foil.
    • Bake in 400ΒΊ F oven till done, about 40 minutes.
      You can also cook the foil packet on the BBQ grill if you wish.
      Once done, remove and keep wrapped until ready to use.
    • Wash and chop for dill and green onion.
    • Slice your salmon into thin strips.
    • In a frying pan on med-high heat, heat the olive oil.
    • Add the green onion and cook for 2 minutes.
    • Add the dill, butter, salt & pepper. Cook for about a minute.
    • Open the foil packet, and place the potatoes in a serving bowl.
    • Pour the warm dill dressing over the potatoes, and toss to coat.
    • Place potatoes onto serving plates, top with slices of smoked salmon.
      Garnish with fresh ground pepper, and additional fresh dill.

      I love Dill for the beginning of summer, it’s so fresh! I do own cookbooks also, especially when I travel I try to pick up the “traditional” recipes proper to the place I’ve visited. NIce recipe!

      I’m the same with Dill – love it with so many soups! It’s an underrated herb in my opinion. Should be used more! Potatoes, Dill, and smoked salmon- beautiful and delicious combination!
