Suggestions/Recipe Tips
Cottage Cheese – I used creamed cottage cheese (full fat) in this biscuit recipe. You can use 2% or low fat if you prefer.
Avocado Oil – Perfect for baking and cooking. You can use vegetable oil as an alternative.
Everything Bagel Seasoning – There are lots of great options for store-bought. You can also make your own if you prefer. Here is a great recipe. You can experiment with other seasonings such as Italian, Greek, or other herbs.
Milk – Any dairy or non-dairy variety will work in this recipe.
Cookie Cutter – The size of the cookie cutter will determine the number of biscuits you end up with. The cutter I used is 2 ยฝ inches in diameter.
Parchment Paper – Used to line the baking sheet makes for easy cleanup and prevents the biscuits from sticking.
Silicone Mat – Prevents the dough from sticking to the counter. Alternatively, you can lightly flour the surface.
Storing – They will keep at room temperature for 2-3 days. Cover or wrap tightly so they will not dry out. For longer storage place in the fridge or freezer.
Warming – I love eating these warm right out of the oven. To reheat, wrap in foil and place in an oven for several minutes.

Is creamed cottage cheese just cottage cheese that’s made creamy via using a blender or food processor?
Gloria Duggan | Homemade & Yummy
Hello, in Canada we can get cottage cheese that is labeled “creamed”, but it really is just full fat cottage cheese. Any cottage cheese will work in this recipe.

Well I adding to my previous comment. They are not pretty but they taste amazing!! Baked for 17 min instead. Thank you for the recipe!!
Gloria Duggan | Homemade & Yummy
I am so glad you managed to get the recipe to work for you. Gluten-free baking is a little more tricky I find. That being said, taste wins over presentation, glad you enjoyed them.

Just making these with gf flour Namaste. Always use this gf flour. Very crumbly & would not roll out. Had lots of loose flour in bowl after mixing but not too much. So I made blobs & put them on my baking sheet. Hope they turn out. Used a lot of flour to waste them. They smell great when I was trying to work with the dough!! Not sure what I did wrong but will see how they turn out after baking.

Hello Chris, and thanks for the feedback. This recipe used all purpose flour. I have found gluten-free flour is a little tricky to work with sometimes. Even when purchasing baked goods from the store, the texture is much more dense and crumbles easily. You could always try reducing the amount of flour slightly. I also find some brands of gluten-free flours work better than others.
Stella
I haven’t made these yet because I don’t have everything bagel seasoning. Can I use a substitute?
Gloria Duggan | Homemade & Yummy
Hello Stella, if you check under the Suggestions/Recipe Tips I did mention you can use Italian, Greek or any seasoning you like. Hope this helps. ENJOY!
