    Easy creamy broccoli soup without the use of heavy cream. Just what you need for a quick weeknight dinner.

    Canned soup is super convenient, but not always the healthiest. Once you try making homemade soup, you will be so impressed. The taste is far superior to anything you will find in a can.

    One-pot healthy broccoli soup recipe that is super easy to make. Quick homemade soup with vegetarian, vegan and gluten-free options.

    Homemade soup is so comforting. Nothing fancy, just wholesome ingredients cooked together to create some the best comfort food around. Great for cold winter days, but we enjoy soup all year long. Have you tried zucchini gazpacho? Perfect for the patio on hot summer days.

    Making soup is one the best ways to clean up any leftovers you have in the fridge. You just might be surprised at the tasty creation, different every time.

    Whether you are making slow cooker spicy kale soup, roasted cauliflower soup, or creamy mushroom soup, adding vegetables is a great way to get some nutrition into picky eaters. It really is hard to say no to a delicious bowl of homemade soup.

    Broccoli Soup Ingredients

    This comforting soup includes healthy ingredients that can easily be adapted to your taste. Naturally thickened with potatoes, and non-fat canned milk replaces heavy cream. Be sure to read the suggestions and recipe tips below.

    • broccoli
    • broth
    • carrots
    • onions
    • potatoes
    • seasoning
    • canned milk
    • seasoning
    • olive oil

    Easy Homemade Broccoli Soup

    This soup recipe is so quick and easy to prepare. Full instructions are in the recipe card.

    Making homemade soup with broccoli.
    • Sauté the carrots and onions.
    • Add the seasoning.
    • Add the broth, potatoes and broccoli.
    • Cook until the vegetables are tender.
    Pureé soup and add milk.
    • Blend the soup.
    • Add the canned milk.
    • Heat until the milk is warm.

    Once the soup is done, remove from the heat. Ladle into bowls, garnish (or not) and enjoy. This recipe makes 4 large bowls, the perfect size for dinner.

    Suggestions / Recipe Tips

    • Broth can be chicken or vegetable. This makes is easily adaptable for vegan and vegetarian options.
    • Broccoli can be fresh or frozen. No need to thaw if using frozen.
    • Potatoes naturally thicken the soup, so if you what it thicker, use more potatoes.
    • Canned milk can be fat-free for a healthier no cream version. It can be replaced with regular or 2% canned milk. Alternatively you can use heavy cream, or coconut milk is great if you want a vegan option.
    • No salt seasoning can be swapped for Italian, Greek or any seasoning blend you like.
    • Garnish is optional. Grated cheese or croutons are great choices. You can even use some small pieces of raw broccoli too. A dollop of sour cream or yogurt is great too.

    • Store leftovers in a sealed container in the fridge for up to 4 days.
    • Reheat in a pot, or in the microwave.

    Ingredients

    • 16 ounces broccoli cut up
    • 2 ounces onion diced
    • 4 ounces carrots diced
    • 14 ounces potatoes diced
    • 5 cups chicken broth
    • 12 ounces evaporated milk 1 can / fat free
    • 2 teaspoons no salt seasoning
    • 1 tablespoon olive oil
    • garnish optional

    Instructions

    • Dice the onions, carrots and potatoes and set aside.
    • Wash and cut the broccoli and set aside.
    • In a stock pot heat the olive oil over medium heat.
    • Sauté the onions and carrots for about 5 minutes.
    • Add the seasoning and mix to coat.
    • Add the broth, broccoli and potatoes. Bring to a boil, turn down and simmer until the vegetables are tender. This will take about 20-25 minutes.
    • Remove from heat and blend the soup using an immersion blender. If you don't have one, use a regular blender doing it in batches.
    • Return the pot of soup to the stove, add the milk and heat through for a couple of minutes.
    • Ladle into bowls, garnish if you like and serve.

    Notes

    Chicken broth can be replaced with vegetable broth to make this vegan.
    Canned milk can be replaced with almond or coconut milk.
    Adding more potatoes will make a thicker soup.
    Frozen broccoli can replace fresh broccoli.
    No salt seasoning can be replaced with Greek, Italian or any seasoning you like.
    Store leftovers in a sealed container for 3-4 days in the fridge.

      I have never tried broccoli soup before but this looks delicious!
      For some reason I thought it would be much harder to make than this. Can’t wait to whip up a batch for my family.

      I never thought to use evaporated milk in soups but it really does make sense! I’d add both the evaporated milk and aallll the cheese 🙂 What a great one-pot recipe!!
