- feta cheese
- black olives
- bell peppers

- Drain the tuna.
- Dice the veggies.
- Mix the ingredients in a bowl.
- Spread on bread.
- Top with the other slice.
- Cut and serve.
Suggestions / Recipe Tips
- Tuna packed in oil is so flavourful. Using canned tuna packed in water (flaked or solid) will also work.
- This is a no-mayo sandwich recipe. If you prefer a creamier filling, add some Greek yogurt or mayonnaise.
- Bell peppers of any colour are delicious.
- Fresh tomatoes of any variety will work. I like to cut out the pulp and seeds, especially from large tomatoes.
- No salt is needed since the olives and feta are salty enough.
- Black pepper and basil are perfect, but you can also use Italian or Greek seasoning, rosemary, oregano, and fresh herbs.
- Butter is optional, and I chose not to use any. I find it adds extra calories.
- Bread or buns of any kind are perfect for making sandwiches. Toasting is a great option.
- Lettuce can be used as a final layer. It helps to keep the filling away from the bread.
- Filling can be made and kept in the fridge until ready to use.
- Store any leftovers in a sealed container for up to 2 days.

Mediterranean Tuna Salad Sandwich
Ingredients
- 4 ounces canned tuna in oil (1 regular size can) drained
- 1 ounce feta cheese crumbled
- 1 ounce black olives sliced
- 2 ounces bell pepper diced
- 2 ounces fresh tomatoes diced
- ⅛ teaspoon black pepper
- ¼ teaspoon dried basil
- 4 slices whole wheat bread any bread you like
Instructions
- Dice the peppers and tomatoes.
- Drain the oil out of the tuna and place in a mixing bowl.
- Combine the tuna with the peppers, tomatoes, sliced olives, feta cheese and seasonings.
- Divide the mixture in half (this recipe makes 2 sandwiches).
- Spread the sandwich filling onto a slice of bread.
- Top the sandwich with the other slice of bread. Cut and serve.
