Apple season is one of my favourite times of the year. So many things you can make, and so many things I know I will be eating. How about you, do you love apple season? Are you cooking/baking and EATING as much as we are? Â I am having such a hard time just keeping up with my “to make” list. Pumpkin season is running a close second, and my kitchen is incredibly aromatic these days with all these delicious recipes.
What will I submit to this sponsored post? It has to be different. Reinventing the wheel is not that easy since there are lots of delicious recipes on the net. What am I going to do to make this submission different? What will make it standout from the rest?
Apples are so versatile. From breakfast to dessert and ALL things in between, apples have no problem being the star ingredient. How awesome is that since they are so healthy too. I know we don’t have a problem fitting them into our diet in so many delicious ways. My Apple Cottage Cheese Smoothie is one of our favourite breakfast/lunch options. It’s perfect for people on the go. You can eat healthy even when you are busy.
I think I will make a soup since I have not tried this before. Experimenting in the kitchen is fun, and I am up for a challenge. It will showcase these awesome Cortland apples perfectly. Hmm….I think I need to use more than just apples in this. I have some apple cider and dried apples. That’s it, I will use 3 different preparations of apples in the soup. This soup has to stand out. I want to get picked for this sponsored post.
One of our favourite apple recipes this season has been Puff Pastry Fried Apple Tarts. It has been doing well on Pinterest and Facebook. They are fun to make and are perfect for sharing. Tasty little bites, just like having your own mini apple pie. Bet you eat more than one!! If you have ever been to Cracker Barrel and love their fried apples, you will love these.
Ok what am I going to flavour this soup with? It has to have a bit more than just apples in the profile. Although apples are delicious, from watching all the cooking shows it is going to have to be a bit more complex. What pairs well with apples? Bacon does, like the applewood smoked bacon we totally devour for breakfast here. I have some awesome bacon flavoured olive oil that would be perfect. I can add it in the soup, and drizzle a bit on top as a garnish. Brilliant!!
Wow this soup has come together really well. It is simple, yet packed with flavour. Love that it is gluten free too, opens up a lot more sharing on Pinterest. I think this is going to be a winner. How many people are going to submit a “soup” to be considered? I have thought outside the box, so let’s see if it’s good enough.
With the fall season here, and winter on the way, the shift to comfort food is underway. Although I don’t like the cold weather, I totally LOVE the flavour profiles of Fall. Seriously between apples and pumpkins I am in food heaven. Â There are countless ways to savour the flavour of these tasty seasonal gems.
Are you kidding me? I didn’t get picked! Seriously how much more “outside the box” are they looking for? I think it’s a winner. Am I biased…absolutely, aren’t Gordon Ramsay and Curtis Stone too? My official taste tester (dear hubby) said it was a hit, he can’t be wrong. They must have mixed me up with someone else.

Incredible 3 Way Apple Soup
Ingredients
- 2 pounds Apples (peeledcored & cut into chunks) (Your choice of variety)
- 1 pound Parsnip (peeled & roughly diced)
- 2 tablespoons butter
- ½ teaspoons ground ginger
- 1 teaspoons cinnamon
- 1 ½ cups fresh apple cider
- 2 cups onion broth
- 1 teaspoons fresh lemon juice
- ¼ teaspoons garlic powder
- 1 tablespoons bacon flavoured olive oil (more for garnish)
- ¼ teaspoons smoked sea salt
- Pepper to taste
- ½ cup sliced dried apples (for garnish)
Instructions
- Prepare apples and parsnips and set aside in a bowl.
- Heat butter in a heavy bottom pot over medium heat.
- Add apples, parsnip, ginger, cinnamon, salt & pepper.
- Sauté for 10 minutes.
- Add lemon juice.
- Add apple cider and onion broth..
- Bring to a boil, reduce and cook for 10 minutes (apples & parsnips should be fork tender).
- Remove from heat.
- Using an immersion blender, pureé until smooth.
- Add bacon oil.
- Ladle into bowls.
- Garnish with dried apple slices, and additional bacon flavoured oil.
- ENJOY!!

Bacon flavoured olive oil? Excuse me for a second while I do a happy dance – amazing idea and where do I get it? I think this soup sounds wonderful and very unique. A few years ago I hosted an Apple dinner where every item and course was made with apples. I too had apple chips and chicken patee with apples, apple cheddar bread, apple-onion chutney, cider braised ribs, apple pie and apple ice cream. I am sure I’m missing something too
