    This easy Apple Soup recipe combines apples, apple cider, and dried apples in a delicious soup with a hint of bacon flavour.

    It’s gluten-free, nut-free, and dairy-free! It’s also made in 30 minutes. Don’t you just love the flavours of fall?

    Warm apple soup made with fresh apples and apple cider. Sweet and tangy. Perfect as an appetizer or even dessert.

    Apples are versatile and the star ingredient for many delicious recipes from breakfast to dessert.

    Fruit soups are something I have not tried, so this was a great opportunity to experiment. Fall is the perfect time for anything warm in a bowl. Why not combine some wonderful autumn flavours and try using apples in soup?

    What’s In Apple Soup?

    The flavours of fall are in this soup. It’s almost like eating warm applesauce.

    • fresh apples
    • apple cider
    • parsnip
    • butter
    • onion broth
    • garlic powder
    • cinnamon
    • ginger
    • bacon oil
    • dried apples (for garnish)

    Easy Apple Soup In Minutes

    With a few minutes of prep time and about 20 minutes of cooking, this delicious apple and parsnip soup is ready. Full instructions are in the recipe card below.

    Homemade soup is so easy and tastes better than anything you can get from a can. This is a great recipe for beginners. Nothing hard or complicated.

    Blended soup made with apples.
    • You prep the apples and parsnips by peeling and dicing.
    • Heat the butter.
    • Add the apples, parships and spices and cook for a few minutes.
    • Add the apple cider and broth.
    • Cook until the apples and parsnips are tender.
    • Remove, puree, ladle into bowls, garnish, and eat.

    Suggestions / Recipe Tips

    Any variety of apples will work for this recipe. I prefer something more tart, but hey, sweet works too.

    Fresh apple cider is best. This is the perfect time of year to find some in markets and grocery stores.

    Cinnamon and ginger are perfect for any fall recipe. You can play around with the amount, or add some cloves into the mix. Apple pie seasoning is also a great option.

    Onion broth can be replaced with chicken broth.

    The perfect fruit soup made from fresh apples.

    Dried apples for garnish are such a great addition to this soup. You can also try dried cranberries or pumpkin seeds too.

    Bacon oil adds such a nice little touch at the end. This is completely optional.

    I used an immersion blender, but you can also use a regular blender. In a pinch, a potato masher will do, but the soup will not have the applesauce consistency.

    This soup will last for several days stored in the fridge. Easily reheat in a pot on the stove or the microwave.

    Ingredients

    • 2 pounds fresh apples peeled, cored and diced
    • 1 pound Parsnip peeled and diced
    • 2 tablespoons butter
    • ½ teaspoon ground ginger
    • 1 teaspoon cinnamon
    • 1 ½ cups fresh apple cider
    • 2 cups onion broth
    • 1 teaspoon fresh lemon juice
    • ¼ teaspoons garlic powder
    • 1 tablespoon olive oil (bacon flavoured) more for garnish
    • ½ teaspoon smoked sea salt
    • pepper to taste
    • ½ cup sliced dried apples for garnish
    US Customary – Metric

    Instructions

    • Prepare apples and parsnips and set aside in a bowl.
    • Heat butter in a heavy bottom pot over medium heat.
    • Add apples, parsnip, ginger, cinnamon, salt & pepper.
    • Sauté for 10 minutes.
    • Add lemon juice.
    • Add apple cider and onion broth..
    • Bring to a boil, reduce and cook for 10 minutes (apples & parsnips should be fork tender).
    • Remove from heat.
    • Using an immersion blender, pureé until smooth.
    • Add bacon oil.
    • Ladle into bowls. Garnish with dried apples and additional bacon oil.

      Bacon flavoured olive oil? Excuse me for a second while I do a happy dance – amazing idea and where do I get it? I think this soup sounds wonderful and very unique. A few years ago I hosted an Apple dinner where every item and course was made with apples. I too had apple chips and chicken patee with apples, apple cheddar bread, apple-onion chutney, cider braised ribs, apple pie and apple ice cream. I am sure I’m missing something too
