This easy Apple Soup recipe has all the flavours of apple season in a bowl. Made with fresh apples, apple cider and dried apples for garnish.

Ingredients

fresh apples
peeled, cored and diced

Parsnip
peeled and diced

tablespoons
butter
½
teaspoon
ground ginger
1
teaspoon
cinnamon
1 ½
cups
fresh apple cider
2
cups
onion broth
1
teaspoon
fresh lemon juice
¼
teaspoons
garlic powder
1
tablespoon
olive oil (bacon flavoured)
more for garnish
½
teaspoon
smoked sea salt
pepper to taste
½
cup
sliced dried apples
for garnish
Instructions
Prepare apples and parsnips and set aside in a bowl.
Heat butter in a heavy bottom pot over medium heat.
Add apples, parsnip, ginger, cinnamon, salt & pepper.
Sauté for 10 minutes.
Add lemon juice.
Add apple cider and onion broth..
Bring to a boil, reduce and cook for 10 minutes (apples & parsnips should be fork tender).
Remove from heat.
Using an immersion blender, pureé until smooth.
Add bacon oil.
Ladle into bowls. Garnish with dried apples and additional bacon oil.
