    Fresh apples are in season. This easy muffin recipe is just what you need. Apple and toffee-topped muffins are perfect for fall (or any season of the year). You will want to give these Apple Cranberry Scones a try too.

    A fun twist on toffee apples, this fall-inspired muffin recipe is perfect for breakfast, brunch, and snacks. It’s a treat for any season.

    Were you one of those lucky kids that had a neighbour who made toffee apples at Halloween? You had to run to that house first to ensure you got yours. I remember those days.

    We all know apples and cinnamon are a winning combination. The aroma as it bakes is so heavenly. Eating apple streusel muffins right out of the oven slightly warm is my kind of wonderful.

    Oatmeal apple muffins are a hit in our house, especially when we have them for breakfast. Apple Fig & Oatmeal muffins are one of our favourites this time of year. 

    With the cooler weather on the way, the fall flavour season is here. Pumpkin and apple recipes are flooding social media right now, and rightly so. I happen to think this particular flavour season rocks.

    What’s In Toffee Apple Muffins?

    The idea around this easy apple muffin recipe was to get the taste of toffee apples without the sugar rush.

    • fresh apples
    • milk
    • butter
    • flour 
    • maple syrup
    • graham cracker crumbs
    • eggs
    • baking powder
    • salt
    • cinnamon
    • Skor Bits (the awesome toffee topping)

    Toffee bits are so good. I can eat them by the handful (and do). What a great way to get that toffee taste in recipes, and the perfect topping on muffins and cakes.

    If you prefer, you can always choose other toppings. These fresh apple muffins would also be delicious with a crumble or streusel topping. You can never go wrong with cinnamon and brown sugar, it works perfectly on Cinnamon Coffee Cake.

    Baking Apple Muffins From Scratch

    If you are new to baking, muffins are a great place to start. It’s like making mini apple cakes. With a bit of peeling, dicing, and mixing, you will master this easy muffin recipe in no time. Full instructions are in the recipe card below.

    1. Peel and dice the fresh apples and place them in a bowl.
    2. Preheat your oven and prepare your muffin tins. I prefer to line them with muffin liners.
    3. Combine all the dry ingredients in a large bowl.
    4. Combine all the wet ingredients in a bowl.
    5. Mix the wet and dry ingredients.
    6. Fold in the apples.
    7. Scoop the batter into the muffin tin (about ⅔ full).
    8. Top with the toffee bits.
    9. Bake.
    10. Cool
    11. Eat!!
    How long will muffins stay fresh after baking?

    Usually about 1-2 days.

    How do you store muffins?

    You can store them for about 4 days in an airtight container. Do not refrigerate muffins as it will make them dry out.

    Can you freeze muffins?

    You can freeze muffins for up to 3 months. I like to individually wrap them in plastic and place them in a freezer bag. This way I can take out the amount I need. Thaw at room temperature.

    How do you warm muffins?

    You can heat them in the microwave on a medium setting for about 20 seconds. You can also wrap them in foil and warm them in the oven on a medium heat for 4-5 minutes.

    Can I substitute applesauce for diced apples?

    Yes you can. One apple is roughly 3 ounces of applesauce.

    Which Apples Are Best For Muffins

    We love visiting the local Ontario apple orchards this time of year. Freshly picked apples are super healthy and delicious. Our favourites are Honey Crisp and Courtland.

    I prefer an apple that keeps a firm structure during the baking process. Each area has lots of great varieties to choose from. Even your local supermarket will have apples from other regions.

    Other apples great for baking include:

    • Granny Smith
    • Pink Lady
    • Mutsu (or Crispin)
    • Braeburn
    • Northern Spy

      Apple Muffins with Toffee Topping

      Ingredients

      • 1¼ cups Fresh apple (peeled & diced)
      • 1 ¼ cups milk
      • ½ cup butter (melted)
      • ⅓ cup maple syrup
      • 1 ½ cups graham cracker crumbs
      • 1 ½ cups all-purpose flour
      • 1 egg
      • 1 tablespoon baking powder
      • 1 teaspoon cinnamon
      • ½ teaspoon salt
      • ½ cup Skor Toffee Bits (for topping)

      Instructions

      • Preheat oven to 400º F and line muffin tin with liners (or use silicone muffin cups).
      • Peel apples, core and dice. Set aside.
      • In a bowl beat the egg, add milk, melted butter, maple syrup and graham crumbs. Mix to combine.
      • In another bowl whisk the flour, baking powder, salt and cinnamon.
      • Add the wet mixture to the dry mixture, and stir to moisten.
      • Fold in the apples.
      • Scoop batter into muffin cups.
      • Top with Skor bits.
      • Bake for approximately 18-20 minutes.
      • Remove from oven. Let cool slightly in pan. Transfer to cooling rack.

      Notes

      You can use any apple variety you like. In this recipe I diced the apples because I like chunks of fruit, but feel free to grate the apple if you prefer.

        I’m going to have to check out our store for the toffee bits, if not, I’ll be sure to look them up in Amazon Gourmet shop. I bet these muffins are a huge hit with the grandkids!! Next year we’re moving closer to ours and I have a feeling we’ll be getting lunch guests quite often from our kids and grandkids. These muffins would be handy to have on hand as treats when they come over. I’ve already pinned. 🙂

        Apple season is the best season! These look amazing and I am in love with the topping! We moved about a year ago so don’t really know the neighbors much! The kids do have a blast trick or treating though no matter what!

        Gloria, this is such a gorgeous recipe. Absolutely love the toffee topping on these muffins. Apple picking used to be our favorite fall activity when we lived in East coast. Missing it here in the South.

        Your neighborhood sounds a lot like ours. We have also been here over 20 years. Back in the day when our kids were young, we would see lots of trick or treaters, then it tapered off. This year though we’ve had a bunch of younger families move in, so I think we might get more this year!
