Hard-boiled eggs are such a great ingredient to have on hand. I always have some ready in the fridge. Perfect for snacking. Great in recipes like pickled eggs, and devilled eggs.
Sometimes, especially in the hot summer weather, all I want is a sandwich for dinner. Easy to make without heating up the kitchen. Perfect to eat on the patio or deck.

Simple Egg Salad Ingredients
I love when recipes only need a few simple ingredients:
- Eggs
- Tortilla wraps
- Mayonnaise
- Sriracha seasoning
- Lettuce
Making An Egg Salad Wrap
The classic egg salad spread is easy to make. Chop, mix, spread, and roll. Full instructions are in the recipe card. I have also included my tips for boiling and peeling eggs below.
- Prepare the hard-boiled eggs.
- Chop
- Add mayonnaise and seasonings.
- Mix
- Place some lettuce leaves on the tortilla wraps.
- Divide the egg salad filling and spread.
- Roll like a burrito. Be sure to tightly tuck in the bottom.

Suggestions/Recipe Tips
Mayonnaise – I like Hellman’s but feel free to use any variety you wish. I find Miracle Whip too sweet. You can also use Greek yogurt as an alternative. Avocado is also another healthy choice. Just mash it up and use it in place of mayo. Use the amount you like to create the perfect texture of filling.
Lettuce – Romaine works well, but there are lots of options. Boston, Leaf, and Iceberg are just a few. Kale and spinach are great choices too. Sprouts like broccoli and sunflower are delicious as well.
Sriracha Seasoning – Zesty and full of flavour. If you don’t like things spicy, salt and pepper, or any of your favourite seasonings will be a great substitute. Dry mustard is another option. It adds a flavourful punch for sure. Be careful not to use too much as it has a strong flavour. Yellow, spicy, or grainy mustard are the classic choice.
Tortilla Wraps – White, whole wheat, spinach, sun-dried tomato. Take your pick they all are fantastic. I like using the 10-inch, but feel free to use smaller ones. Adjust the amount of filling accordingly. Of course, bread and buns are always a hit for sandwiches.
Additional Add-Ins – Celery, green onion, chives, parsley, pickles, olives and even finely chopped radishes.
Chop The Eggs – This creates nice chunks of eggs. You can mash them, but the filling will be much smoother in texture.
Large Eggs – I find this size works best. I prefer free run or free-range eggs. You can reduce the number of eggs per wrap. I find using 3 makes a nicely stuffed wrap. Great for a complete meal.
The Perfect Hard-Boiled Eggs
The end result should be tender egg whites and creamy yolks. There are so many ways to do this. I have tried most of them, and this is the way that works best for me.
- Place your eggs in a pot and cover completely with COLD water.
- Place on the stovetop and bring to a full boil.
- Once boiling, remove the pot from the heat, COVER, and let the eggs sit for 10 minutes in the hot water. Be sure to set your timer! You don’t want to leave them longer than 10 minutes.
- When time is up, immediately dump out the hot water. Fill the pot with cold water and throw in some ice to get the eggs cooling down.
- Once cool (about 15 minutes) place in a container in the fridge.
Easiest Way To Peel Boiled Eggs
Again, so many ways to do this. This is the hardest and most frustrating part.
Some people like to peel their eggs in a bowl of water. For me, I find tapping the egg at both ends, and then the middle works. I usually start with the big end first. The key is when you start to peel the eggs, get under the membrane and GENTLY peel away the shell.

No, I do not recommend freezing.
They will last for 7 days. Peeled eggs should be placed in a sealed container.
Yes, the egg filling will safely last 3-4 days in a container in the fridge.
When serving, egg salad should not be left out at room temperature for more than 2 hours.

Ingredients
- 2 10 inch tortilla wraps
- 6 large hard boiled eggs
- ½ teaspoon Sriracha seasoning
- ¼ cup mayonnaise
- lettuce leaves
Instructions
- Peel the hard-boiled eggs. ***NOTE*** I have included my method of boiling eggs in the post.6 large hard boiled eggs
- Using a knife, roughly chop and place in a bowl.
- Add the seasoning and mayonnaise. Mix to combine.¼ cup mayonnaise, ½ teaspoon Sriracha seasoning

- Spread the egg filling between the 2 tortillas
