    Roasted Blueberry Quinoa Breakfast Bowls

    Get your morning started with these tasty Roasted Blueberry Quinoa Breakfast Bowls. Sweet juicy roasted berries with protein-packed quinoa to keep you full and satisfied till lunch. A great gluten-free breakfast recipe.

    Breakfast casseroles are easy to prepare. Make them on the weekend for easy mornings. Reheat and eat. Have you tried Chocolate Strawberry Baked Oats? It is sure to be a hit in your house. After all, who doesn’t want to eat chocolate for breakfast?

    Quinoa breakfast porridge topped with a delicious roasted blueberry compote. These breakfast bowls are perfect for brunch or lunch too.

    Cooked fruit is so delicious. My homemade spiced apple compote is the perfect topping for pancakes, waffles, and more. I even eat it by the spoonful.

    Need a super easy dessert that is company worthy? Baked pears with a balsamic glaze are sure to please. 

    Roasted Blueberry And Quinoa Bowl Ingredients

    With just a few simple ingredients, these wholesome breakfast bowls are super delicious and so easy to make. I have included some great recipe suggestions below.

    • roasted blueberry topping

    Are you a breakfast person? Considering this is the most important meal of the day, I will be the first to admit this is the meal I most often skip. Go without coffee? NEVER.

    Brunch, on the other hand, is in a league all its own. We love making and eating big brunches on the weekend. With grilling season here, hubby is out there cooking up bacon and eggs on the bbq (when it’s not raining of course) all summer long.

    If I had to pick one of the above, I would choose oatmeal. Whether baked in a breakfast casserole or used in overnight oatmeal recipes like Chocolate Almond Oatmeal, you will always find a nice supply of oats in my cupboard.

    How To Roast Blueberries

    Full instructions are in the recipe card below. I have also included how to cook the quinoa using a combination of milk and water to make it more of a porridge.

    • Wash the blueberries.
    • Preheat the oven.
    • Place the berries and sugar in a baking dish.
    • Bake until they are just starting to burst open.

    Quinoa is a great alternative to meat as it is protein-packed. You can make it ahead of time and have it waiting in the fridge to use in recipes during the week.

    • It is great in Quinoa Tuna Casserole, a modern twist on the classic recipe.
    • Quinoa Stuffed Bell Peppers are perfect for dinner.
    • Love sushi, but not all the work? Sushi salad has all the flavour and none of the work.
    • Mini Mexican Casseroles are great for easy weeknight dinners.

    Suggestions/Recipe Tips

    Quinoa can be replaced with oatmeal, cream of wheat, or cornmeal.

    Fresh blueberries are used in this recipe. You could also roast frozen blueberries. Give other berries a try as well.

    Cinnamon sugar in the blueberries can be replaced with raw sugar, brown sugar, coconut sugar, or even maple syrup or honey. Adjust the amount according to your taste.

    Chai seasoning in the quinoa can be substituted with cinnamon, nutmeg, or any seasoning you like.

    Store the leftovers in the fridge. I would keep the roasted blueberries and cooked quinoa in separate containers.

    Reheat in the microwave for easy morning breakfasts.

    Ingredients

    For the Roasted Blueberries

    • 2 pounds fresh blueberries
    • 1 tablespoon sugar (I used cinnamon flavoured sugar)

    For the Quinoa

    • 1 ½ cups uncooked Quinoa
    • 1 ½ cups water
    • 1 ½ cups milk ( I used full fat milk)
    • 1 ½ teaspoons chai seasoning (optional)
    US Customary – Metric

    Instructions

    For the Roasted Blueberries

    • Wash and clean blueberries (removing any stems) and let dry slightly on a kitchen towel.
    • Preheat the oven to 400º F.
    • Place clean berries in a heat proof baking dish.
    • Add the sugar, and give them a stir.
    • Bake in oven for about 12 minutes, stirring several times.
    • Berries are done when the berries are just about ready to burst open.

    For the Quinoa

    • Cook according to package directions.
    • I used ½ milk and ½ water, and added some chai seasoning (optional).
    • Place quinoa in serving bowls, and top with berries.

    Notes

    We found the berries to be sweet enough, but if you need more sweetness in your breakfast bowl, add some maple syrup or honey.

      I love grain bowls and roasted blueberries and quinoa sounds brilliant. I’ve got some leftover quinoa in my fridge right now in fact! 🙂 I’ve been making bowls like this a lot since I came back from maternity leave. They are super quick and nutritious!
