    Preparing food for breakfast, lunch, and dinner can seem like such a chore and downright overwhelming for some. I guess that is why takeout is so popular.

    Don’t even get me started on the price of food these days. I know I am looking for some meatless meal options to ease the grocery budget.

    This easy chickpea salad recipe is vegan, vegetarian, dairy and gluten-free. Perfect for plant-based eating. Great for using as a filling in a chickpea pita.

    I like having some no mayo salad recipes, especially for the hot summer days. If you are a fan of coleslaw, give this cauliflower salad a try. Great for summer parties.

    Chickpeas are a great source of protein, carbs, fiber, vitamins, and minerals. The perfect budget-friendly meat alternative and can be used in a variety of recipes.

    Have you tried marinated chickpeas? Great as a topping, added to sandwiches, perfect addition to cheese boards.

    Chickpea Salad Ingredients

    • chickpeas
    • fennel
    • carrots
    • curry flavoured olive oil
    • lime juice
    • turmeric
    • curry powder
    • agave nectar
    • salt

    Indian Inspired Chickpea Salad

    This salad is ready to eat in 20 minutes or less. Great for meal prep. Full instructions are in the recipe card.

    Step One: Rinse your chickpeas in a wire mesh strainer and set aside.

    I used a spiralizer to cut the carrots (I love using kitchen gadgets), but you can cut them however you like. Grate, julienne, dice, there is NO wrong way to get the job done. The same goes for the fennel. I just thinly sliced it.

    Step Two: Combine the ingredients for the curry dressing and set aside.

    Step Three: Place the carrots, fennel and chickpeas in a bowl. Toss in the chickpeas. Pour on the dressing and mix.

    Place in bowls, garnish and eat! This plant-based salad recipe is so easy to make. Fresh vegetables and vibrant dressing combine to make a protein packed salad.

    Suggestions/Recipe Tips

    • Canned chickpeas are so convenient, easy, and quick. Feel free to prepare dried chickpeas from scratch.
    • Curry oil can be replaced with olive oil or avocado oil. You can also increase or decrease the amount of curry powder used in the recipe to suit your taste.
    Super easy chickpea salad recipe that is vegan, gluten and dairy free.
    • Carrots and fennel are perfect with this curry dressing. However, you can use any vegetables you like. Cabbage, lettuce, and spinach are great options.
    • Agave nectar can be replaced with honey or coconut sugar.
    • Store leftovers in the fridge in a sealed container. It will last for several days. The carrots and fennel will not get too soft.
    • Garnish can be anything you like. I used the fennel fronds. Pumpkin seeds are a great option

    Can you eat canned chickpeas raw?

    Absolutely! They are cooked and ready to eat. Be sure to rinse well before eating.

    Are garbanzo beans the same as chickpeas?

    Yes, they are. In the US they are called chickpeas. In Europe, they are called garbanzo beans.

    Ingredients

    For the Salad:

    • 5 ounces fennel (sliced)
    • 5 ounces carrots (spiralized)
    • 14 ounces canned chickpeas (rinsed)

    For the Curry Vinaigrette:

    • 2 tablespoons curry flavoured olive oil (or any oil)
    • 1 ½ tablespoons lime juice
    • ⅛ teaspoon turmeric
    • ¼ teaspoon curry powder (or to taste)
    • ½ teaspoon smoked sea salt (or pink salt)
    • 1 teaspoon agave nectar (or honey)
    • fennel fronds (for garnish)

    Instructions

    • Rinse the canned chickpeas with water in a mesh sieve and set aside.
    • Cut the fennel and carrots however you like. I thinly sliced the fennel and sprialized the carrots. Place in a bowl.
    • Add the chickpeas to the carrots and fennel.
    • Mix the vinaigrette ingredients together. Pour over salad ingredients, and toss to coat.
    • Divide salad into 2 serving bowls. Garnish with fennel fronds.

    If you don’t happen to have curry flavoured olive oil, use regular olive oil and slightly increase the amount of curry powder.

      This salad sounds fantastic, except for the fact that fennel is probably the one food I just dislike the most. I was very late in the spiralizer game as I only got myself one earlier this year so I’m still an excited newbie, so anytime I see a new recipe that requires the use of it I get excited. I huess I’d just have to skip the fennel in this one. But I saw you linked to a different salad with apple, so I might as well check that one out – maybe it suits my taste even more!

        Fennel is a hit and miss ingredient for sure. I never used to like it, but it does go nicely in this salad.
