Chickpea salad tossed in a fresh and flavourful Indian spiced dressing. Great for a healthy lunch or side dish.

Preparing food for breakfast, lunch, and dinner can seem like such a chore and downright overwhelming for some. I guess that is why takeout is so popular.

Don’t even get me started on the price of food these days. I know I am looking for some meatless meal options to ease the grocery budget.

This easy chickpea salad recipe is vegan, vegetarian, dairy and gluten-free. Perfect for plant-based eating. Great for using as a filling in a chickpea pita.

Healthy Chickpea Salad with Curry Dressing ready to eat.

I like having some no mayo salad recipes, especially for the hot summer days. If you are a fan of coleslaw, give this cauliflower salad a try. Great for summer parties.

Chickpeas are a great source of protein, carbs, fiber, vitamins, and minerals. The perfect budget-friendly meat alternative and can be used in a variety of recipes.

Have you tried marinated chickpeas? Great as a topping, added to sandwiches, perfect addition to cheese boards.

    Chickpea Salad Ingredients

    • chickpeas
    • fennel
    • carrots
    • curry flavoured olive oil
    • lime juice
    • turmeric
    • curry powder

    Indian Inspired Chickpea Salad

This salad is ready to eat in 20 minutes or less. Great for meal prep. Full instructions are in the recipe card.

Step One: Rinse your chickpeas in a wire mesh strainer and set aside.

I used a spiralizer to cut the carrots (I love using kitchen gadgets), but you can cut them however you like. Grate, julienne, dice, there is NO wrong way to get the job done. The same goes for the fennel. I just thinly sliced it.

Step Two: Combine the ingredients for the curry dressing and set aside.

Curry salad dressing in a glass container.

Step Three: Place the carrots, fennel and chickpeas in a bowl. Toss in the chickpeas. Pour on the dressing and mix.

Pouring salad dressing over the salad ingredients.

Place in bowls, garnish and eat! This plant-based salad recipe is so easy to make. Fresh vegetables and vibrant dressing combine to make a protein packed salad.

    Suggestions/Recipe Tips

    • Canned chickpeas are so convenient, easy, and quick. Feel free to prepare dried chickpeas from scratch.
    • Curry oil can be replaced with olive oil or avocado oil. You can also increase or decrease the amount of curry powder used in the recipe to suit your taste.
Super easy chickpea salad recipe that is vegan, gluten and dairy free.
    • Carrots and fennel are perfect with this curry dressing. However, you can use any vegetables you like. Cabbage, lettuce, and spinach are great options.
    • Agave nectar can be replaced with honey or coconut sugar.
    • Store leftovers in the fridge in a sealed container. It will last for several days. The carrots and fennel will not get too soft.
    • Garnish can be anything you like. I used the fennel fronds. Pumpkin seeds are a great option
A forkful of curried chickpea salad.
Can you eat canned chickpeas raw?

Absolutely! They are cooked and ready to eat. Be sure to rinse well before eating.

Are garbanzo beans the same as chickpeas?

Yes, they are. In the US they are called chickpeas. In Europe, they are called garbanzo beans.

I love chickpeas and use them a lot, although I usually use dried ones and soak them. This salad sounds yummy! Love the curry dressing!

By all means, feel free to use dried chickpeas. I really have to plan ahead…so I find organic canned ones work the best for me.

I’ve never seen a curry flavored olive oil but that sounds intriguing. I use garlic infused olive oil all the time so I bet this would be a fun swap. This salad looks healthy and easy to throw together for a tasty meal. I totally agree with you about using canned chickpeas – so much easier!

Curry oil is amazing. I love all the flavoured oils…and have a hard time only buying a few when I go to the store. They are available online from olive oil companies.

I have all the ingredients except for the curry olive oil. Now, I have to admit I go pretty nutty over flavored olive oils — simply love them and I’m like a little kid in a toy store. I have to find the olive oil and make this salad. It would make such a great luncheon salad.

I know what you mean about a kid in the candy store. That is how I am too….I take hubby along to keep me in check, or I would be bringing home like 20 bottles at a time. LOL.

This salad looks so nourishing. I can’t wait to make it for my friends who are vegan. They will appreciate the healthy ingredients and be so happy there will be something satisfying for them on the table. I love the way the spiralized carrots look like noodles. Super fun!

This looks so refreshing and light. I love a good salad dressing and this has my favorite curry flavor too. I could eat this for a meal on its own with chickpeas and fennel in there. I’m in heaven.

This is such an inventive combination. Raw fennel has that slight anise flavor that really peps up my tastebuds. I never think to use carrots as the mainstay of a salad, but the way you’ve done it here makes me rethink that. This would be a great make-ahead lunch option. Perfect for brown bagging all week long — and healthy too.
