I don’t know what the weather has been like for you this summer, but for us, it has been the driest, hottest, most humid weather we have had here in Ontario for years! People that have pools really are getting a good season for a change.
Trying to stay hydrated and cooling off from the heat has been so important. There are so many great ways to do this, but one of my favourites is popsicles. These Blackberry Lemon Tea Pops are perfect when it’s time to take a break from the hot summer sun.

Making popsicles at home is so much fun. Whatever your imagination can think up you can create. The best part is that you don’t have to use any artificial flavours or preservatives. Natural sweetness can usually come from berries, juice or tea.
In fact, you can turn this blended watermelon mint juice into a frozen treat.
There are lots of different shaped ice pop molds as well, even some made from stainless steel. Once you start making your own frozen treats and see how easy and fun it is, you will quickly become a hit with the kids and adults alike. I guarantee the ones you make at home are so much better than bought, and the flavour combinations are endless.
For these ice pops, I used whole blackberries, Teavana® Summer Lemonade Citrus tea and candied lemon zest. Simple ingredients that produce a nice zesty and refreshing popsicle.
Have you ever made candied lemon zest? It is so easy and really adds a nice lemon flavour to whatever you decide to use it in. Fine Cooking has a great easy recipe. I just replaced the orange in this recipe with lemon.
When brewing the tea I usually double the recommended amount per serving. I want a nice strong flavour. Once the tea is ready and slightly cooled, it’s time to assemble the ice pops.
Take your washed blackberries and place them in the ice pop molds. I try to use large berries so they stay in place a little better. Next drop in some strands of the candied lemon zest. Pour in your cooled tea, put on the tops and place in the freezer. Simple right? Go ahead experiment with different fruits and teas to come up with your favourite combination.
This tea is on the sweet side, and the candied lemon zest adds both sweetness and a bit of zest. I did not feel the need to add any additional sweetness, but of course, let your taste buds guide you.
Once they are frozen, I will run the outside of the mold under hot water to help loosen the pops out. Now time to sit back and relax with an incredible and refreshing Blackberry Lemon Tea Pop.

Blackberry Lemon Tea Pops
Ingredients
- 2 cups lemon tea strong brewed and slightly cooled
- 1 package of fresh blackberries
- Candied lemon zest optional
Instructions
- Brew tea and cool slightly.
- Wash blackberries.
- Place a few berries into each ice pop mold.
- Add a few strands of candied zest (if using) around berries.
- Pour in tea.
- Place on tops.
- Place in freezer until frozen.
- Run mold under hot water to loosen the ice pop.
- ENJOY!!
