    Baked Quinoa Casserole is perfect for dinner any night of the week. This vegetarian casserole features vibrant vegetables, cannellini beans, and quinoa. Gluten-free, protein-packed, and super delicious.

    Wholesome quinoa bake with mixed veggies and beans is a delightful medley of flavours and textures. Nutritious and so easy to make. Leftovers are never boring.

    With the price of groceries rising, I am looking for more ways to feed the family without breaking the bank. Meatless and vegetarian meals are gaining traction these days.

    Experimenting with different ingredients has been fun. Quinoa, lentils, and beans have become our favourite meat substitutes. Great for casseroles, soups, stews, and salads.

    The nutritional facts of quinoa are quite impressive. It’s easy to prepare and can be used in both sweet and savory recipes.

    This quinoa vegetable casserole is sure to be a hit. You can customize it to suit your taste. Leftovers are delicious, and it freezes well too.

    Vegetarian Baked Quinoa Ingredients

    Everything is easy to find, and I have included some great recipe suggestions below.

    • quinoa
    • onion
    • frozen vegetables
    • tomato sauce
    • olive oil
    • seasoning
    • garlic
    • beans
    • parmesan cheese

    Baked Quinoa Casserole Is Easy To Prepare

    You need to pre-cook the quinoa for this casserole. The best part is you can do this a day or two in advance and have it ready to use. Follow the package directions for cooking instructions. Store covered in the fridge until needed.

    I used an oven-safe skillet to cook the mixture. Alternatively, you can transfer the mixture to a casserole dish before placing it in the oven. Full instructions are in the recipe card below.

    Steps in preparing vegetarian quinoa bake.
    • Heat the olive oil, and cook the onions and garlic.
    • Toss in the frozen veggies, and cook for about 5 minutes.
    • Mix in the cooked quinoa, beans, seasoning, sauce, and cheese.
    • Place in the oven and bake.

    This easy quinoa bake is ready to eat in about 40 minutes. It’s an easy casserole for busy weeknight dinners.

    Suggestions/Recipe Tips

    Quinoa can be any variety you like. I used tri-coloured quinoa in this recipe. Pre-cook the quinoa according to the package directions.

    How much dry quinoa do I need to cook? Quinoa expands when cooked. 1 cup dry will yield about 3 cups of cooked quinoa.

    What is the water to quinoa ratio? This can vary. 2 parts liquid to 1 part quinoa (2:1) is often used. I prefer 1 ¾ cups water to 1 cup quinoa. This makes the quinoa with a nice fluffy texture.

    Frozen vegetables do not need to be thawed before using. You can use any blend or combination you like.

    Tomato sauce can be replaced with crushed tomatoes, canned diced tomatoes or even spaghetti sauce.

    Parmesan cheese can be increased or reduced. You can also use any cheese you like.

    Italian seasoning can be replaced with any blend or combination of spices.

    Beans are great, and I used white kidney beans also known as cannellini beans. Swap them out for red kidney beans, black beans, Romano beans, or even chickpeas.

    Store leftovers covered in the fridge for up to 4 days. Alternatively, you can freeze it for longer storage.

    Reheat easily in the oven or microwave.

    Serve this quinoa recipe for dinner as the main dish. Need a side dish? How about a pea salad or easy onion bread?

    Ingredients

    • 1 cup dry quinoa pre-cooked
    • 2 tablespoons olive oil
    • 19 ounces white kidney beans drained/rinsed
    • ½ cup onion diced
    • 2 cloves garlic minced
    • 14 ounces frozen mixed vegetables
    • 2 teaspoons Italian seasoning
    • 1 cup tomato sauce
    • ¼ cup Parmasen cheese
    • salt & pepper to taste

    Instructions

    • Pre-cook the quinoa according to package directions. This can be done in advance.
    • Preheat oven to 375ºF
    • In a skillet heat the olive oil over medium heat.
      2 tablespoons olive oil
    • Add the onion and cook for about 3 minutes.
      ½ cup onion
    • Add the garlic and cook for 1 minute.
      2 cloves garlic
    • Add the frozen vegetables, cook for about 5-6 minutes until they start to soften.
      14 ounces frozen mixed vegetables
    • Add the pre-cooked quinoa, beans, tomato sauce, seasoning and cheese. Combine to mix well.
      1 cup dry quinoa, 19 ounces white kidney beans, 2 teaspoons Italian seasoning, ¼ cup Parmasen cheese, 1 cup tomato sauce
    • If your skillet is ovenproof, place it in the pre-heated oven and bake for about 40 minutes. Alternatively, you may need to transfer the mixture to a casserole dish and bake.
    • Remove from oven, and serve. Season with salt, pepper and additional cheese if desirerd.

    Notes

    Pre-cook quinoa according to package directions. This can be done ahead of time and kept in the fridge until ready to use. Any colour is great.
    Frozen vegetables can be any kind you like. 
    Seasoning can be Italian, Greek, or any combination you feel like using. 
    Fresh herbs are great as a garnish. Try some oregano, thyme or parsley.
