Did your mom make homemade meatloaf when you were a kid? It was and still is a staple in most families. Unfortunately, my mom did not do a great job at this. I always hated it when she served meatloaf for dinner. According to my husband, he had the same issue when his mom made it too.
I always wondered why I felt this way. So I took matters into my own hands and started experimenting with different ways to make it a welcome addition to our dinners. She always made it with ground beef. We try to limit our red meat consumption, so a lentil loaf is a great meatless option.
Ground turkey meat pie is a favourite around here. The grocery store had some ground chicken on sale, so I picked some up. I just happened to have a box of cornbread stuffing in the house, and chicken and cornbread go well together.
Everyone uses ketchup and brown sugar for a meatloaf topping. However, I also had a bottle of mustard BBQ sauce in the fridge. Let me tell you, this simple meatloaf recipe turned out fantastic.

Easy Chicken Stuffing Meatloaf
This ground chicken loaf is so easy to make. All you need is one mixing bowl and one baking pan. Full instructions are in the recipe card.
- Add all the ingredients into a large mixing bowl (not the BBQ sauce).
- Mix well to combine.
- Place in a prepared loaf pan. I like to use foil for easy cleanup.
- Pop it in the preheated oven.
- Halfway through baking, add the meatloaf glaze topping.
- Bake until done.
- Allow to cool before removing from the loaf pan.
- Slice and serve.
Suggestions / Recipe Tips
- Ground chicken can be replaced with ground turkey if you prefer.
- Stuffing can be any flavor you like. The stuffing mix is a great binding agent and replacement for traditional breadcrumbs.
- Seasoning is optional. I find the stuffing mix has lots of flavour. Add any additional seasoning you like.
- BBQ sauce is a delicious topping. Traditional ketchup and brown sugar glaze is always a great option.
- Baking in a foil-lined loaf pan works best. You can use any baking pan you like, but you may have to adjust the cooking time.
- Serve alongside some potatoes or rice and veggies. I served it with mashed sweet potatoes and roasted broccoli.
- Store leftovers wrapped in plastic or foil in the fridge for up to 4 days.
- Freeze for longer storage. I like to wrap individual slices in plastic and then place them in a freezer bag.
- Reheat wrapped in foil in the oven. I like to add more BBQ sauce to the slices before heating. It helps to keep the meat moist.

Ground Chicken Stuffing Meatloaf
Ingredients
- 2 pounds ground chicken
- 1 box Stove Top cornbread stuffing (or any flavour)
- 2 eggs
- 1 cup water
- ⅓ cup BBQ sauce (for glaze)
Instructions
- Preheat oven to 375ºF.
- Line a loaf pan with foil and coat with cooking spray (this makes for easy cleanup).
- Add all the ingredients (except the BBQ sauce) into a mixing bowl. Using your hands or a spoon combine well.
- Place the mixture into the prepared loaf pan.
- Bake uncovered for 30 minutes.
- Remove from oven and spread the BBQ sauce over the meatloaf. Return to oven and bake for an additional 25-30 minutes. Meatloaf is cooked when the internal temperatre is 170-175º F (use a meat thermometer).
- Once cooked, remove from oven and allow to rest for 10 minutes.
- Remove from pan, slice and serve.
