This simple chicken meatloaf recipe replaces breadcrumbs with a box of cornbread stuffing mix, topped with bbq sauce. Quick and easy dinner for busy weeknights that the whole family will love.
Line a loaf pan with foil and coat with cooking spray (this makes for easy cleanup).
Add all the ingredients (except the BBQ sauce) into a mixing bowl. Using your hands or a spoon combine well.
Place the mixture into the prepared loaf pan.
Bake uncovered for 30 minutes.
Remove from oven and spread the BBQ sauce over the meatloaf. Return to oven and bake for an additional 25-30 minutes. Meatloaf is cooked when the internal temperatre is 170-175º F (use a meat thermometer).
Once cooked, remove from oven and allow to rest for 10 minutes.
Remove from pan, slice and serve.
Notes
Add more BBQ sauce 10 minutes before the meatloaf is done if you want a thicker glaze.Any flavour of stuffing will work in this recipe. Store leftovers wrapped in foil in the fridge for up to 4 days.Reheat in the oven, adding more BBQ sauce to help keep it moist.This meatloaf freezes well. Slice and wrap individual slices for easy reheating.
