Cucumber Bagel Sandwich is easy to make, perfect for lunch, brunch, or dinner.

In the hot days of summer, sandwiches are all we want. No heating up the kitchen. This open-faced tomato and cheese sandwich is one of our favourites. Great with garden fresh tomatoes.

I love the combination of cream cheese on a bagel. Toasted or not, it is always a hit in our house. One of my favourite breakfasts. I love this deli version of a smoked salmon bagel for dinner with a nice glass of white wine.

Making A Bagel Sandwich

Making sandwiches has to be the easiest way to prepare a meal. Even kids can do it. You can be a sandwich master, perfect for people who hate cooking. No need for expensive takeout. Sandwiches are a great choice.

  • Slice the bagel and spread the cream cheese on both sides.
  • Sprinkle with some fresh dill.

  • Thinly slice the cucumber and layer on one half of the bagel.
  • Top with the other half.
  • ENJOY!

Suggestions/Recipe Tips

Bagels can be any type you like. Toasted or not, the choice is yours. Of course you can always replace it with 2 slices of bread.

Cream cheese can be any variety. Regular, whipped, low fat or even flavoured. Vegan cream cheese is a great choice too.

Fresh dill is so delicoius. In a pinch you can use dried, but I would mix it into the cream cheese, and also reduce the amount used in the recipe.

Cucumbers of any variety will work. Peel or not, the choice is yours.

You can also use other fresh herbs. Basil would be great. Not into cream cheese? Try goat cheese, whipped feta or ricotta. Mayo is a great substitiute as well.

Ingredients

  • 1 bagel sliced in half
  • 3 tablespoons cream cheese
  • 2 ounces cucumber sliced
  • 1 teaspoon fresh dill

Instructions

  • Slice the bagel.
  • Spread the cream cheese on both halves.
  • Sprinkle with the fresh dill.
  • Layer the sliced cucumbers on one half of the bagel.
  • Top with the remaining half of bagel.

    I’ve long been a fan of cucumber sandwiches. They are a classic for tea in the UK where I grew up. This version is so much more flavorful than others I have tried. I love the use of a bagel instead of plain bread and the fresh dill is lovely!
