    Baileys Zebra

    Baileys Zebra is a combination of…well…Baileys and coffee, then drizzled with dark chocolate. What a great “adult” frozen treat!!

    Who doesn’t like frozen treats?  As a kid I loved popsicles, fudgesicles and creamsicles.  Now that I am an adult (well most days ?) and making things at home is so much better….these frozen treats have taken on a whole new level of YUMMY!!  This year I picked up some frozen treat molds.  

    Now that I am a gramma I want to make sure there are always great tasting snacks for the grandchildren to have…keeps them visiting often!!  But what about “special” adult treats? Looking in my fridge I realized I had some Baileys in there.  We were hosting a BBQ and I thought this would be the perfect time to give these treats a try.  What a great way to end a day in the sun!!

    Using some instant espresso (you can use freshly made espresso as well) I made some coffee in a measuring cup. You can make the coffee as strong as you like. To the coffee I added the Baileys. My mixture ratio was 1:1. If you want it more creamy you can add some regular coffee cream to the mix.  I poured the mixture into the molds and placed them in the freezer.

    Once frozen I got ready to drizzle the chocolate.  I melted some really good dark chocolate and placed it in a piping bag.  I took the treats out of the mold and placed them on a cooling rack.  I drizzled the chocolate over the treats, and put the rack with the treats into the freezer just to harden.  Once hardened, I took them out, turned them over and drizzled the other side.

    I put the rack back in the freezer to harden again.  Since now you cannot place them back in the mold…and we were not eating them at this point, I carefully placed them in a container (single layer) on wax paper, sealed with a lid back in the freezer till we were ready to eat.

    Honestly it doesn’t get any easier and you certainly can’t buy a Baileys Zebra in the store.  I will say when I brought these out at the end of the night they were a hit, all I heard was “OMG Baileys“.

    I know I will be experimenting soon with more yummy options.  Luckily I bought 2 sets of molds….one for the adults and one for the kids!!

    Ingredients

    • Espresso coffee instant or fresh
    • Baileys liqueur
    • Dark chocolate
    • Frozen treat molds

    Instructions

    • In a measuring cup mix coffee and Baileys. I used a 1:1 ratio.
    • Pour mixture into molds.
    • Freeze until set.
    • Melt chocolate and place in piping bag.
    • Remove treats from mold and place on cooling rack.
    • Drizzle with chocolate.
    • Place rack back in freezer just until hardened.
    • Remove from freezer and turn treats over.
    • Drizzle chocolate on the other side.
    • Return rack to freezer to harden.
    • If you are not eating them at this point, place them in a single layer on wax paper in a container.
    • Seal with a lid and return to freezer until ready to eat.
    • Enjoy!!

    Notes

    If you want a creamier consistency simply add some coffee cream to the mixture before pouring into the molds.

      I love the simplicity of this recipe. At once awakening the child in all of us whilst still being a proper adult fare. I am just back from a beach holiday, Needless to say, I had my fair share of cocktails, but your pictures beckon “come hither” πŸ™‚ Kudos!
