We happen to love smoked salmon. Smoked salmon salad has been a great recipe this summer, and of course you can never go wrong with a smoked salmon bagel (my favourite).
As I flipped through the cookbook and noticed Baked Smoked Salmon And Goat Cheese Egg In A Hole Two Ways, I knew this was one of the first recipes I wanted to try.
Smoked Salmon Egg In a Hole Two Ways
Let’s get down to cooking, and see how easy this salmon and eggs recipe is to make. If you have little ones around, they can help you. As a gramma, my grandkids love helping me in the kitchen.
Have you ever had a baked egg in a hole? Maybe you call it eggs in a nest, eggs in a basket, toad in a hole, or eggs in toast. This smoked salmon egg in a hole breakfast recipe is an egg bake with bread slices done on a sheet pan. You can make enough for 2 people, or use multiple pans to feed a crowd at brunch.
This super easy recipe has two different variations. Both contain the same ingredients of smoked salmon, goat cheese, capers, eggs and bread.
Butter your choice of bread (I used Ezekiel and it was fantastic) and cut out a hole (I used a cookie cutter). This is where the little ones can help.
For the first variation mix all the ingredients together and pour into the hole. Sort of like an “omelet in a hole”. The other variation is layering the ingredients, and top with an egg. Just love the presentation here, perfect for entertaining.
You can cook both of these together at the same time. If you like your eggs on the “runny side”, take them out sooner. Want your eggs “well done”, leave them in a little longer.
While these bake, so does your toast. How cool is that? If you are feeding a crowd, cook a pan (or two) of each and let your guests decide which one they would like. My suggestion EAT BOTH, they are SOOOOO delicious. I know for sure Smoked Salmon Egg In A Hole will be on our brunch menu OFTEN.
Easy breakfasts like avocado on toast and eggs in a hole are great “breakfast for dinner” options too.

Smoked Salmon Egg In A Hole
Ingredients
- 2 teaspoons butter
- 4 slices whole wheat sandwich bread
- 1 teaspoons vegetable oil
- 1 ounce smoked salmon slices (divided)
- 1 ounce goat cheese (crumbled & divided)
- 2 teaspoons capers (chopped)
- 4 eggs
- salt & pepper (to taste)
Instructions
- Preheat the oven to 425º F
To Prepare the Bread:
- Lightly butter each slice of bread. Cut out the center of the bread slices, leaving about ½ inch of crusts to create a hole.
- Place the bread slices and cut-outs, buttered side up, on a non-stick baking sheet.
- Drizzle the oil in each hole.
For the First Style:
- Chop half of the smoked salmon into small pieces, and add to a small bowl.
- Add half of the crumbled goat cheese, half the capers, and 2 eggs to the bowl. Mix well with a fork.
- Pour the mixture into the holes of 2 bread slices.
For the Second Style:
- Cut the smoked salmon in half, and layer at the bottom of each remaining (2) bread slice holes. The smoked salmon should cover most of the hole.
- Top with the remaining crumbled goat cheese and chopped capers.
- Carefully crack the egg on top of the goat cheese, making sure the yolk remains whole.
To Bake:
- Bake in the oven: 12 minutes for medium eggs, 9-10 minutes for runnier eggs.
- ENJOY!
