    Lemon No Churn Ice Cream

    Lemon no churn ice cream is the perfect Easter treat. A fun and easy way to make homemade ice cream without a machine.

    It has a subtle lemon flavour, combined with pastel coloured marshmallows and Easter sprinkles.

    Homemade lemon no churn ice cream without a machine. Rich, creamy and all the colours of spring. No ice cream maker needed. Great for Easter.

    Easter should be full of colours. Time to get rid of the winter blahs and make room for spring! Easter nest cookies are fun to make and are no-bake too. The perfect place for the Easter bunny to stash some treats. Maybe Cadbury creme eggs?

    I always equate Easter with lemon desserts. Maybe it is the colour? Maybe it is the taste? Lemon polenta cake is easy, delicious, and makes a great presentation. Full of lemon flavour, and it just happens to be gluten-free too.

    Speaking of lemon, I could eat homemade lemon curd by the spoonful. The perfect topping on fresh-baked scones, biscuits, or even toast. You can even use it in parfaits too.

    Looking for a bakery-style dessert to serve your guest? How about lemon tarts? Shortcrust pastry that is filled with lemon curd. OMG, they are so delicious.

    When I was a child, we often had a dessert I like to call Spring Delight. I took the flavours of this family favourite and created this fun and easy recipe. 

    We also enjoy this traditional Ukrainian cheesecake at Easter too.

    No-churn ice cream ingredients.

    No-Churn Ice Cream Needs:

    There are only 2 main ingredients for the basic no-churn recipe:

    • condensed milk
    • whipping cream

    Combining the flavours from my childhood dessert was a fun experiment. I was thrilled with the results.

    Take the basic ingredients and add:

    • lemon pudding
    • coloured marshmallows
    • lemon extract
    • yellow food colouring
    • Easter sprinkles

    Make Lemon Ice Cream Without A Machine

    All you really need is an electric stand mixer (even a hand mixer will work). This is so easy to make.

    Whipped cream in the bowl of a stand mixer.
    1. Beat the whipping cream until it forms peaks.
    2. Fold in the condensed milk (combined with the pudding).
    3. Add lemon extract and food colouring.
    4. Fold in marshmallows.
    5. Scrape into loaf pan.
    6. Top with sprinkles.
    7. Cover with plastic wrap and freeze until firm.
    No churn ice cream in a pan getting covered in Easter sprinkles.

    This turned out creamy smooth and easy to scoop. Pale yellow and softly flavoured with lemon. Dotted with pastel marshmallows and Easter sprinkles.

    No churn ice cream will last 3-6 months in a sealed container in the freezer. However, it never lasts that long in our house, especially if the grandkids are around.

    Who needs an ice cream maker? This fun to make No-Churn Lemon Ice Cream is perfect for Easter. It has marshmallows and topped with lots of Easter sprinkles.

    Ingredients

    • 2 cups whipping cream
    • 11 ounces sweetened condensed milk (1 can)
    • 2 cups mini coloured marshmallows
    • ¼ teaspoons lemon extract
    • 3 drops yellow food colouring (optional)
    • 1 ¾ ounces instant lemon pudding (½ package)
    • ⅛ cup Easter sprinkles (optional)
    US Customary – Metric

    Instructions

    • Pour the whipping cream into a bowl. Whip until it forms soft peaks.
      (use a handheld or stand mixer)
    • Pour the condensed milk into a measuring cup and add the lemon pudding. Mix well.
    • Gently fold the milk/pudding mixture into the whipped cream.
    • Add the lemon flavouring and food colouring. Mix gently to combine.
    • Add the marshmallows and mix just to combine.
    • Pour mixture into a non stick loaf pan.
    • Top with Easter sprinkles.
    • Cover with plastic wrap and freeze for at least 4 hours (or overnight).
    • Remove from freezer and scoop into bowls or cones.

      Aaaaaaah! I just love all those sprinkles on there, it turned out so cute! For some reason lemon and Easter go together for me too and my little guy would just love this. I need to add it to our list of things to make!

      Homemade ice cream is the best treat and this is just perfect for the Easter feast! Love the festive colors and the flavors and you got me on the lemon. I just love the flavor of the lemon and can never have enough of it. So simple to make and the best part is we don;t require any special gadgets to make this.

      I LOVE lemon and cannot get enough of it this time of year (in fact, I have a lemon cream pie cooling on my counter at this very moment)! Strangely enough, I’ve never tried no churn ice cream, though. I have such a great ice cream maker, I love pulling it out to make the real deal. I can’t believe how EASY the no churn stuff is!

      Lemon is one of a my favorite flavors for dessert. I’m with you on the lemon curd never making it into a pie! I love it on blueberry muffins or pancakes. This sounds so perfect for spring and a easter treat. Fun to make with the kids too!.

      I’m not sure I’ve ever pinned a recipe so fast in the life. I love lemons and I love this even more because it’s no churn. This is absolutely perfect for Spring (and summer too!) I cannot wait to whip this up and serve myself a big waffle cone at home!

      This is the perfect bright Spring dessert. The sprinkles you have on the top are adorable for Easter. It would go great as an extra dessert with some pie or cake too.
