When it comes to summer meals, you should be spending time enjoying the weather, not standing in the kitchen. Easy recipes are the name of the game. The heat should be outside, and cooking should be stress free.

Summer is finally here, although for us it has been on the rainy and cool side of things. Hopefully, it will improve because it is really putting a damper on outdoor cooking. It is much more fun cooking outdoors it in the warm sunny weather.

Using the grill is our favourite part of summer. I know lots of people do it all year long, and I really wish we had great weather to do that too. Persuading hubby to get bundled up in the cold weather to cook me a steak. takes a bit of convincing. Come Christmas, the turkey is getting smoked on the grill, so if he wants to see presents under the tree (and eat dinner), bundle up baby!

SUMMER DESSERTS

When it comes to desserts in the summer, easy, light and stress free are key. Save all the intense stuff for later, like Christmas. For now, I would rather spend my time sitting in the backyard with a cold  Watermelon Mint Refresher, or a frozen treat like Blackberry Lemon Tea Pops.

Summer is berry season. Whether you eat them on their own, or add them to lots of delicious recipes, nothing beats fresh berries. From breakfast to dessert, incorporating these juicy gems is easy. Smoothies are so much better with fresh ripe berries. My Triple Berry Coconut Smoothie seems to be happening quite a lot these days.

LEMON LOVER

I will be the first to admit, as far as desserts go I prefer the “less” sweet version of things. Lemon meringue pie is one of my top 3 delicious desserts.

As far as cakes go, this is the best polenta cake recipe I have ever made. Cornmeal, almond flour, and lemon syrup. The classic Italian cornmeal cake is sure to please.

Since pie is more work than I want to do in the heat, Lemon Curd Parfait with Fresh Strawberries is a winner.

If you have never made lemon curd before, don’t stress. Perfect Lemon Curd is only minutes away. This is so easy to make, and turns out perfect every time. Make up a huge batch and keep it in the fridge. Use it on pancakes, mix it in yogurt, or just eat it off the spoon (like me).

These desserts are simple to put together, and perfect for entertaining too. Crushed up lady fingers, whipped cream, fresh strawberries and lemon curd layered in a glass. How much easier can it get?

You can always switch up lady fingers with graham crumbs, and use different berries. Lemon curd works with so many flavours, give blackberries or raspberries a try and see. I like to stabilize the whipped cream, especially in the heat. This helps the desserts hold up longer.

Ingredients

  • 4 lady finger biscuits (crushed)
  • ¾ cup lemon curd
  • 6 ounces fresh strawberries (sliced)
  • 1 teaspoons sugar (optional)
  • ¼ cup whip cream (whipped)

Instructions

  • Whip cream and place in the fridge until ready to use.
  • Crush lady fingers and set aside.
  • Wash and slice berries. If you want your berries sweeter, place in a bowl with sugar and mix. 
  • Get a serving glass.
  • Layer the ingredients: crumbs, lemon curd, whipped cream, berries, crumbs, lemon curd, whipped cream, and end with berries.
  • Place in the fridge till ready to serve.
  • ENJOY!!

    Oh this looks so tasty! Almost like an individual lemon berry tiramisu! I love lemon curd. And strawberries are perfect with it!
