There is nothing better than a fresh dill pickle. Eating them a couple of days after they are made. I would never let my mom’s dill pickles sit very long before cracking open a jar.
She was a master canner! I mean the fruit cellar was packed with mason jars. Sweet pickles, hot pickles, bread and butter pickles. Dill pickles, pickled carrots, mustard pickles, and of course pickled beets.
Mom certainly was into making fermented pickles. Her huge garden was always bursting with veggies.
Besides freezing vegetables, she also turned them into delicious varieties of pickles. She also canned fruit like peaches, pears, cherries, plums and all the wonderful homemade jams too. My aunt had an orchard, so all the produce bases were covered.
Washing and sterilizing all the jars. Making the brine. Cooking the pickles. Sure seems like a lot of work to me. Besides, I don’t have a fruit cellar or cold room to store all those jars.
No-cook refrigerator pickles are MY “go-to” method for making pickles. I make a batch (or two, since I usually give some away), eat them, then make more. Always having fresh pickles in the fridge is great.
I have experimented with several kinds of easy pickle recipes. I thought it would be fun to create a recipe roundup. With the help of some of my blogger friends, you just might be surprised at ALL the types of easy refrigerator pickles you can make.

The next type of quick pickles I decided to try was Pickled Onions. These are a staple in our house. We use them on sandwiches, burger, and toss them into salads.
Zucchini Pickles have to be our favourite easy pickle recipe. This is a summer staple for all the bbq parties. The perfect condiment for burgers. Well, it’s a tie between these and Bourbon Caramelized Onion Jam. I always have jars of both!

There are so many delicious varieties of dill pickles. Hot, garlic, kosher, Russian just to name a few. All have subtle differences, all are totally delicious.

EASY REFRIGERATOR PICKLED VEGETABLES
Pickled beets are so delicious, and moms were certainly some of the best I have ever eaten. Have you tried other pickled vegetables? So many great things to make.
Pickled asparagus, pickled radishes, cabbage, and okra too.
Maybe I can convince my daughter to like carrots. Since she loves dill pickles, pickled carrots might work. I know she would love some pickled beans.

HOW LONG BEFORE YOU EAT REFRIGERATOR PICKLES?
Well, if you are like me, probably the same day LOL!
Refrigerator pickles will be ready in 1-2 days. Ideally, the longer you wait, the better. If you can wait a week, the taste would be awesome. NEVER happens in our house, they are eaten quickly.
ALWAYS keep them in the fridge. They will last for several weeks (ours are gone long before that). They will not last as long as traditionally fermented pickles that have been cooked in jars.
DO YOU HAVE TO BOIL THE BRINE FOR REFRIGERATOR PICKLES?
YES! Boil the brine, cool slightly and pour over the sliced veggies or fruit. Boiling dissolves the sugars and salt in the recipes and helps the spices release flavour.
WHAT IS THE BEST VINEGAR FOR PICKLING?
Look at each individual recipe. Most call for white distilled vinegar. Some require cider vinegar or apple cider vinegar. Do not use balsamic vinegar.
